Another busy week and some very late meal plans! But better late than never right? I think I’ve said that way too many times this week. I need to re learn the art of saying no and stop trying to fit so many things in each day/week. Anybody else have this issue at this time of year?
And due to that busy life I’m going to get straight to the point this week and just give you the meal plans!
Plan A
Day 1: Spicy Cassarecce with Vodka, Basil and Parmesan an super easy start to the week, serve with a big green salad.
Day 2: Mussels with a Thai Coconut Curry Broth and Spring Vegetables, this is such a fresh and delicious meal, serve with noodles, rice or crusty bread to soak up that sauce.
Day 3: Sticky Ginger Chicken Meatball Bahn Mi, long title but a delicious mouthful!
Day 4: Crispy Tofu with Broccolini and a Miso Broth, this is honestly my most craved dish and I don’t make it enough.
Day 5: Sourdough Crumbed Fish Burger, is there a better way to end the week?
Plan B
Day 1: Vegetarian Khoa Soi Style Noodle Soup, something nourishing to get you started this week.
Day 2: Tomato and Parsley Salad with a Miso and Extra Virgin Olive Oil Dressing, you can have this as a slight supper served spoon over sourdough toast.
Day 3: Crispy Tofu with Broccolini and a Miso Broth, yummm sort of like agedashi tofu!
Day 4: Spicy Cassarecce with Vodka, Basil and Parmesan, some days just call for pasta
Day 5: Indian Spiced Cauliflower Tacos, As always, there’s some cauliflower for you.
Time to start getting Christmassy: Gingerbread Nicecream every day please!
