Meal Plans Week 68

I always try to keep these posts super positive and full of the joy and sutff but man am I drained at the moment. Being emotionally drained makes me feel creatively drained thus the slightly less posting. Bit I am still creating it’s just taking a little longer than usual! Mostly due to recipes not turning out as wonderful as thye were going to be in my head!

Also I’m having a mental block for what I feel like eating other than meatballs and pasta ever day. But I need to balance that out with loads of veg too ha! So if you actually read this part of these posts then let me know what type of food you want to make at the moment as that kind of direction so helps my process! I’m often asking my friends what they feel like eating to help give me ideas for recipe development and totally want to involve you lovely humans in that process. So comment below, send me an email or a message on ista and you can basically get me to create and test food just for you… and all the other readers ha.

This weeks meal plans are delicious and full of the usual colour and variety. Hope you love them!

Plan A

Day 1: Roast Pumpkin, Thyme and Tomato Bake – how to fix Monday.

Day 2: Mini Chicken Burritos with Tomato Rice – you can make these as larger burritos or mini wraps depending on the size wrap you get your hands on

Day 3: Lamb Meatballs with pomegranate and mint on herbed yoghurt, serve these with a quinoa tabbouleh

Day 4: Chipotle Salmon Tacos, have these with a side of roasted potatoes and guac. You could make a salsa out of an in season fruit like feijoa(guava) instead.

Day 5: Rainbow Chard and Ricotta Tart – the perfect thing for a weekend lunch.

Plan B

Day 1: Eggplant Katsu Curry, because there’s nothing that a light panko crumb can’t make even better.

Day 2: Roast Pumpkin, Thyme and Tomato Bake is still one of my all time favourite pasta bakes.

Day 3: Rainbow Chard and Ricotta Tart. This is so easy to make as the tart shell is baked completely and then filled with the fresh ricotta and sautéed chard.

Day 4: Pumpkin Dahl with Tomato and Spinach. it’s been at least 2 weeks since I made a dahl so definitely time to make it again!

Day 5: Indian Spiced Cauliflower Tacos – it’s the end of the week so have yourself a little taco party.

It might be time for a Tahini Double Chocolate Skillet Brownie!

  1. I have read this post. I hope you are okay. In response to you qn on what I’m lookjng for. I’m just starting on the GF DF journey in response to a newly diagnosed autoimmune disease so any recipes focussed on this (sorry that cuts out the pasta) would be greatly appreciated

    Love your recipes and make at least one from your posts every week.
    Last week I was craving cooked red capsicum and this week it’s ricotta.
    Think my body is trying to tell me something 😂
