Why hello there spring you have well and truly sprung this week, just in time for me to jet off to the other hemisphere and skip to autumn. There’ll still be meal plans coming your way though!
Today is a very exciting day, today my brother gets married and I get a new sister thus this week’s meal plans are going to hero food I know they’d both love. My friend Georgia is organising the flowers for the small ceremony and I’ll be sure to share her creations of my Instagram today, along with the nibbles mum and I will be making – follow along if you want to have a little nosy.
But for now, while I’m busy celebrating, you can get busy planning the week ahead:
Plan A
Day 1: Prawn Pasta with Chilli and Blistered Cherry Tomatoes, this is date night pasta so seems an appropriate nod to the happy couple.
Day 2: Chipotle Black Bean Nachos with Grilled Poblano Peppers, the best vegetarian nachos ever.
Day 3: Brussel Sprout, Crispy Duck Breast and Thyme Risotto. This combination is so simple and incredible.
Day 4: Hummus with Slow Roasted Tomato and Pomegranate Salad, have this with some falafel and flat bread for a full meal.
Day 5: Crispy Skinned Salmon With Creamy Green Sauce, two ways. A dish to keep everyone happy.
Plan B
Day 1: Quick and Easy Hangover Noodles – the happy couple may be in need of these come Monday.
Day 2: Capsicum Baby Kale and Fried Caper Linguini, an amazing mix of flavours.
Day 3: Mushroom and Spring Onion Dumplings, because my brother loves dumplings almost as much as I do.
Day 4: Hummus with Slow Roasted Tomato and Pomegranate Salad, have this as part of a mezze spread with extra salad and flat bread.
Day 5: Chipotle Black Bean Nachos with Grilled Poblano Peppers, friday food feels.
And this week’s bonus recipe? My brother is undeniably a big waffle fan so we have Potato Waffles with Pea Puree and Horseradish Yoghurt.
