7 Ways With: Carrots

The next ingredient in my 7 Ways With series is carrot because it’s the perfect season to be eating loads of these. They’re affordable and delicious.

I also love that they’re the sort of vegetable that can be taken in a sweet or savoury directions and in terms of texture there’s endless variations. You can make crispy roast carrot ‘chips’, grate it in a sandwich or salad, puree into a soup or eat raw and crunchy.

The list below reflects at least some of those variations. What’s your favourite way to eat carrots?

Spiced Carrot and Lentil Soup – a filling and flavoursome soup.

Hummus Breakfast Plates with Honey Sesame Carrots – hummus for breakfast every day please. Or this makes an easy light dinner.

Carrot Cake Chia Pudding – I love topping this with some yoghurt or even doing a layered parfait with green smoothie as in the image.

Carrot Cake Waffles With Cinnamon Maple Yoghurt, carrot cake waffles? Yes please!

Ponzu Salmon and Miso Hummus Bowl, you can use any colour carrots you like in the simple salad that tops this salmon and hummus bowl.

Tofu Schnitzel Rice Noodle Bowls, ribbons of carrot also make an appearance in this tasty noodle bowl. You can totally replace the noodles with carrots if you prefer.
