Today marks the beginning of a new post adventure on my blog. Yep, I just said ‘post adventure’, sorry. I’m going to do a series for the next couple of months called ‘7 Ways With’, each week I’ll highlight a seasonal ingredient and give you 7 different ways to use it. My main aim here is to help you cut down on food waste, and make use of what you have in your kitchen.
If you follow me on Instagram you may have noticed that I’ve been stareting each week lately by using the ingredients in my fridge to make a couple of yummy meals for the days ahead. These might be lunches to take to work, things to snack on or just experiments that sometimes go really well and end up on the blog (hello capsicum pesto pasta you were a winner!).
The first ingredient I’m going to showcase is the cauliflower, because we all know that I’m obsessed with it, eat it all the time and constantly seem to have a half cauliflower lying in my fridge ready to be transformed into something delicious. The purpose of these lists isn’t just to give you 7 recipes for roast cauliflower but give you 7 recipes with totally different techniques and flavour profiles that will make you feel like you’re eating something different every night rather than making your way through left over vegetables.
Choosing 7 cauliflower recipes was actually hard as I must have over 100 on the blog, there’s definitely something wrong with me… but anyway my top 7:
1.Cauliflower and Thyme Carbonara – How to make carbonara better.
2. 30 minute Meatballs with Cauliflower Puree – the quickest meatballs I’ve ever made, they’re pure comfort food with the light and delicious Cauliflower mash.
3. Cauliflower Soup with Parmesan and Quinoa Crisps – my first cauliflower soup and still a favourite if only because it’s dead simple.
4. Cauliflower and Hummus Pita Pockets – roasted cauliflower and hummus is one of my favourite flavour combos. And in a pita with lightly pickled cabbage? Perfection.
5. Tandoori Salmon with Cauliflower Salad – tandoori and cauliflower is a winning combination
6. Crispy Coconut and Sesame Cauliflower – dip in a yoghurt sauce and serve a s a starter or turn them into a salad. These are delicious bites of golden goodness.
7. Cauliflower Massaman Curry – there had to be a cauliflower curry recipe in this list as it soaks up the flavours so well!
