I’m holidaying In Byron Bay this week and my friend could not have timed her wedding better – I get to avoid a horrendous cold snap in Melbourne and trade it for sunshine and sand between my toes. Happiness overload.
Mini Banana and Macadamia Upside Down Cake
This cake is cooked entirely in a skillet because apparently that’s how I like to dessert. The main reason is because I didn’t want to make a cake to serve a party, I wanted it to be small… like 4 serves. And the easiest way to do that (if you don’t have a tiny cake tin) is to make it in a skillet. So here we are, another skillet dessert. You’re welcome.

Mushrooms. How are they such a contentious vegetable? They’re probably up their with brussel sprouts in terms of likelihood of being a despised vegetable. Either that or people adore them. I’m obviously in the latter camp and that’s why today’s ‘7 Ways With’ post is dedicated to those tasty morsels. However, I dated someone for years that hated them, mostly because they were a fungus and apparently eating fungus is gross. Personally I’m all for eating fungus. Especially when it tastes this good…

I just realised this week that I only have 3 weeks left in Melbourne before I go. Which also means 3 more weeks of winter recipes (even if the signs of spring have begun) before I’m back and it’s spring time! Rainbow trout is not a fish I cook often and I honestly don’t know why. It’s like a delicate small version of salmon and cooks so quickly, making it a perfect week night option. If you can’t get your hands on it just replace with a salmon tail and cook for a few moments longer.
