Meal Plans Week 73

Happy Sunday! I hope you’ve all had a glorious week. I’m writing this from Daylesofrd and it’s so picturesque, there’s a fire going and birds singing (when the rain gives them a break). I’m here this weekend cooking at the Essential Being Retreat, we had choc mint bliss balls and a chunky vegetable soup with extra virgin olive oil drizzled sourdough. So much yum.

This week’s meal plans totally reflect this sort of vegetable driven warming food. There’s soups and curries and bowls full of pretty colours for you. I’ve also put those choc mint bliss balls in as the bonus recipe this week as they’re SO GOOD!

I’ve been trying to be super mindful of increasing my vegetable in take this week as I think my cravings for wintery comfort foods have mean they’ve been being replaced with cheese and carbs…whoops!

Plan A

Day 1: Lamb, Eggplant and Almond Curry, this curry is so easy to make and so full of flavour, the eggplant collapses into the sauce for a rich gravy.

Day 2: Ponzu Prawn Black Rice Poke Bowls – oh my god I’m obsessed with these all my favourite flavours in a bowl.

Day 3: One pot 15 minute Chicken Noodle Soup: soup doesn’t get easier than this and way better than a 2 minute noodle soup.

Day 4: Chilli Sesame Crispy Tofu Bun Bowls – there’s a lot of noodles this week but these are hiding in crispy tofu and slaw made from wintery ingredients that are super cheap right now.

Day 5: Cauliflower and Thyme Carbonara – Yes there’s bacon in it but there’s also cauliflower and it makes it soooo good! Serve a rocket and parmesan salad on the side with a red wine vinegar dressing.

Plan B

Day 1: Chilli Sesame Crispy Tofu Bun Bowls, love these crispy sesame tofu pieces and the slaw and noodles are so refreshing.

Day 2: Garam Masala Baked Eggs with Chickpeas and Spinach, any leftover spinach from this easy dish can be used in the day 3 meal!

Day 3: Mushroom and Spinach Fettucine with lemon and walnuts. The lemon and walnuts add so much to this dish, bringing the other ingredients to life.

Day 4: Sweet Potato, peanut and Red Lentil Curry, can’t go past this easy and filling curry ever.

Day 5: Vegetarian Pad Thai, too many noodles this week? Maybe but I really wanted to inculde this as it’s perfect take away at home food!
