These 5 recipes freeze well so you can batch cook 2 of them on the weekend and freeze half your portions for the following week and have different lunches on alternate days for the week. There’s a mix of flavours at play here and all the curries are made from scratch with minimal effort.
I’ve included vegan, vegetarian and omnivore recipes and highlighted what’s what for you to keep things simple. if you’re doing a curry that contains meat I’d highly recommend your second curry is a vegetarian one to mix it up and make sure you get your vegetable intake up. That said the meat one’s contain plenty of vegetables too!
Batch cooking two recipes on the weekend or at the start of the week is a really efficient way to prepare your lunches for the week.You can simplify your life by getting it all out of the way in one go and they all freeze well so you wont be risking any food waste if you decide to eat something else for lunch that week.
I love eating different things throughout the week and it’s also really great for you gut to get variation throughout the week so cooking 2 means both you and your gut will stay excited about what you’re eating. Yep I just said your gut will be excited, I’m sorry.
Obviously if you love eating the same thing every day you could just go with doing one batch cook recipe a week, if you’re this way inclined it’s super important to at least vary your dinners so that you’re eating a vide variety of plant foods across the week.
