Happy long weekend folks! I hope it’s been full of fabulous food and good times. Unfortunately mine has been full of watching Mad Men from bed because I’ve had the flu…. but I think I’m coming right today so I’ll have to make up for lost time on the fabulous food front;)
With that in mind I’ve got some fabulous food in store for the meal plans this week. Lots of delicious ideas to keep you inspired and spread over the vegetarian and not vegetarian realms like usual.
The seasons are slowly changing but it’s still a mix of salad weather and comfort weather and the ideas this week totally reflect that. I hope you enjoy them!
Plan A
Day 1: Sweet Potato and Spinach Massaman Curry, my other favourite massaman!
Day 2: Crispy Skinned Barramundi with a Citrus and Avocado Salad, this is such an easy and delicious light dinner. You can serve with extra greens on the side.
Day 3: Ginger and Sesame Flank Steak Rice Bowls are super easy to make and served with loads of pak choy.
Day 4: Sweet Potato and Black Bean Enchiladas, I’m definitely making these this week, they’re too good not to!
Day 5: Red Curry Chicken Ramen when you mix up a whole load of ideas and deliciousness is born.
Plan B
Day 1: Miso Noodles With Roasted Cauliflower, this makes for an easy and super tasty meal.
Day 2: Sweet Potato and Spinach Massaman Curry, such a great midweek meal and you can take extras for lunch.
Day 3: Quick Spicy Ramen, this vegetarian version is a winner.
Day 4: Middle Eastern Carrot and Parsnip Salad with Yoghurt Dressing, this grain salad is topped with sweet roasted vegetables and a tangy dressing.
Day 5: Sweet Potato and Black Bean Enchiladas, I’m such a fan of this recipe, full of flavour!
And considering the day it is this weeks bonus recipe has to be: Fluffy Hot Cross Bun Pikelets, I’m going to go make some right now!
