This week we’ve got some old favourites mixed in with new recipes that are on high rotation in my house! The warm weather has me loving salad bowls, easy pastas and one pan meals that mean minimal time spent washing up.
My approach to food has slowly become more and more relaxed and it makes life so much more enjoyable. Luckily for me the food I feel like eating ends up being pretty good for me and involves lots of delicious vegetables, but I think that preference has happened slowly over time by listening to when my body feels best. I’m so happy to see the non-diet approach to health and wellbeing becoming much more prominent and the amount of people I know on silly juice cleanses rapidly diminishing!
I’m not going to sit here and pretend I’ve never been on a ridiculous diet, there was this one based on some supermodel’s diet that I did when I was 20 and I actually ate lettuce soup. Lettuce soup isn’t good. Don’t do that. I’m just having a moment of happiness and diets not having any place in my life anymore. It’s a pretty great time.
With that in mind have a look at these delicious dinner ideas full of yummy things that are good for your body!
Plan A
Day 1: Vegetarian Khoa Soi Style Noodle Soup: an easy and delicious start to the week.
Day 2: Chicken Schnitzel with Parmesan Slaw – one of my all time favourites, always.
Day 3: Green Quinoa Bowl with Crispy Skinned Salmon and Herbed Yoghurt – this is on super high rotation at the moment!
Day 4: Easy Sweet Potato Buddha Bowl with Maple Tahini Dressing – this one is great for lunches too
Day 5: One Pan Chicken Thighs with Tomato, Chickpeas, Basil and Buffalo Mozzarella – simple to make and you can serve it with cous cous, cauliflower mash or just crusty bread.
Plan B
Day 1: Crispy Chickpea Bowl with Slaw, Creamy Spinach Dressing and Quinoa – the dressing on this is like a healthier version of spinach dip YUM
Day 2: Roast Capsicum Linguini with Pecorino and Yoghurt – super easy pasta sauce that’s full of flavour.
Day 3: Vegetarian Khoa Soi Style Noodle Soup: this is such a yummy vegetable filled dish that you can easily adapt to suit your tastes.
Day 4: Roast Broccoli with Pine Nuts and Feta, I can eat a big bowl of this buy itself for dinner, add a couple of soft boiled eggs for extra protein.
Day 5: Sweet Potato and Black Bean Enchiladas: these are a little more effort than the rest of the recipes this week but so cheesy and good AND full of veg!
