DUMPLINGS!!! Give me all the dumplings, always! If somebody wants to do a causal dinner, I’m always like “should we get dumplings?” because I want them always and will take any excuse to go out for them. That said I also love making my ow and these are all kinds of perfect. A delicate filling, delicious spicy broth and greens – this is a health food blog after all.
VERY GREEN MATCHA SMOOTHIE
This is a green smoothie that packs a punch in the antioxidant and good for you departments. There’s matcha for those antioxidants, a good dose of omega 3’s, potassium, vitamins A, C and K to name a few, fibre, protein it’s like a powerhouse. I love serving it in a bowl over some muesli for hidden crunch and topped with fruit for contrasting flavours. And because it looks pretty tbh.

Yay to new meal plans! I have such a delicious bunch of recipes planned for this week. The Tortilla soup above might be one of my favourites. It’s so good. Like really ridic. Probs because of the cheese? Most things are because of the cheese… Like, why am I so full before dinner? The cheese, definitely the cheese.
LEMON, PARSLEY AND CUMIN BARBECUED CHICKEN
Often people don’t thinking of cooking chicken whole on the barbecue when they think of barbecue. And I don’t mean rotisserie style I mean right on the grill. It’s by far one of my favourite things to barbecue as it gives it so much flavour and such crispy skin. Cooking on the bone also helps prevent some of the dryness that you can get with grilled chicken.
QUICK SPICY VEGETARIAN RAMEN
I am aware this sin’t my first ‘quick ramen’ recipe but it’s one of my favourite things to eat for dinner so I will keep coming up with variations and sharing them with you. That by no means indicates any level of authenticity. if I’m making ramen at home it isn’t going to be like the ramen experience at a restaurant as I’m just not going to spend that much time making something that I love for how quick it is! That said, it still has to be delicious.
PRAWN PASTA WITH CHILLI AND BLISTERED CHERRY TOMATOES
This is date night pasta. Whether that date is with yourself, a mate or your significant other. The kind of dish that’s impressive but very little effort so you’ll look like a whizz without getting yourself in a state. If tomatoes are in season it is beautiful with roasted Roma tomatoes stirred through, if not then just use a good quality passata. Or alternatively cherry tomatoes, halved and thrown in a pan with a little smashed garlic, chilli, oil and parsley and cooked until blistered is also great (I also make them a bit saucier (in all meanings of the word) by adding a little reserved cooking water from the pasta to loosen the tomatoes into a sauce when I do this.

Happy Sunday folks! I plan on having a day of getting shit done, as balancing full time work and the whole ‘Healthy Hunter’ thing is well, a balancing act. See, my brain is fried. I’m also busy getting holiday prep sorted so I can have a real adventure and not be continuously checking this little blog. Need to learn to let go a little. I have been busily prepping the most delicious of meal plans for you this week. There’s loads of simple week night dinners in both the Vegetarian and Non vegetarian plans. I’ve also thrown in a little something that involves a slight time commitment in each one too. Because challenge helps us grow.
LIME, GINGER AND SESAME SOBA NOODLE SALAD
I am working normalish hours for a change in the lead up to my holiday, and not from my own home, so it means that I actually have the opportunity to test my work lunch recipes on me me me! This salad is super tasty, and the perfect thing to make for work lunches as it takes very little time – ideal right?
CAULIFLOWER AND CHICKPEA TURMERIC CURRY
It’s always a good time for curry and this one is so quick and simple to do. Plus it’s full of flavour like all good curries. And just look at the bright yellow colour!
