Whoop whoop it’s that time of the week again! Meal planning! Well for you it is… I am in Spain planning nothing but my next day trip. I even did your planning in advance so this little collection is ready to go today. I decided this holiday is all about me turning my brain off so most of these posts are written in advance. Such organisation! Now back to your life…
This week we have a pasta, I mean there’s always a pasta because I’m obsessed and predictable apparently! There’s also a couple of salads, a curry and meatballs so that I’m not being completely predictable. In the Plan B vegetarian zone there’s a similar mix but with a super yummy noodle soup instead of those meatballs.
I’ve added the shopping lists below each plan, remember they are coded so that you can easily leave out ingredients if you’re not cooking that particular recipe. If you ever have leftovers at the end of the week and don’t want to waste them feel free to leave a comment below and I’ll send you some ideas. I am a repurposing leftovers and making things out of leftover veg queen!

Day 1: Roast Capsicum Linguini it’s Monday and nothing makes me happier on a Monday than pasta.
Day 2: Middle Eastern Chicken Salad any salad with grains and hummus is a winner in my book. Hummus for life.
Day 3: Prawn Gado Gado Salad I hadn’t eaten gado gado salad in years (it’s and Indonesian salad if you were wondering) and this reworking of it is super tasty.
Day 4: Sweet Potato and Spinach Massaman Curry massaman curry is often my go too and this vegetarian version is so satisfying.
Day 5: Lamb Meatballs with Pomegranate and Mint and a herbed yoghurt sauce and a Quinoa Tabbouleh Salad These meatballs are one of my favourite things and they’re ideal with this gluten free tabbouleh!
Plan B
Day 1: Pasta with Pea and Basil Pesto simple, fresh and tasty plus you can make it extra yum with a poached egg for creaminess (and protein!).
Day 2: Cauliflower Rice Salad with Lemon and Feta Dressing a Simple and delicious salad with the yummiest dressing ever.
Day 3: Pearly Barley Risotto, with Roast Pumpkin, Sun dried Tomatoes and Feta You can make this with aborio rice if you’re gluten free but I love the nutty pearl barley with the pumpkin and sun dried tomatoes.
Day 4: Sweet Potato and Spinach Massaman Curry I’ll eat curry of some kind once a week because it’s easy and delicious.
Day 5: Sweet Corn Noodle Soup you can leave the soup base to this as chunky or pureed as you like. Full of flavour with good slurping potential!
It’s time to make your house smell amazing, this weeks bonus is Caramelised Banana Muffins with a Cinnamon Crumble. Get baking.
