Meal Plans Week 120

This week I’m writing this post on a train to Avignon, as I’ll be spending the next two weeks in the south of France. What a dream!

I can’t wait to visit markets and cook up a storm. I had the lovely experience of shopping at Borough market in London this week, and making a seafood feast for my boyfriend’s housemates and it was so nice to cook for people again.

Now, what you should be cooking for yourself and anyone else you like next week:

Plan A

Day 1: Indian Spiced Cauliflower Lettuce Cups, have as part of a bigger spread or just as a light dinner by themselves.

Day 2: Chicken and Corn Enchiladas with home made sauce. These are a flavour bomb.

Day 3: Mushroom, Cabbage and Thyme Pasta bake, simple, cheap and full of veg.

Day 4: Prawn and Pumpkin Yellow Curry, this might sound like an unusual combination but the sweetness of the pumpkin tempers the spice of the curry and makes it the perfect flavour base for the prawns.

Day 5: Turkey Meatballs with Chermoula and Cauliflower Puree, this is a hit with kids and adults and easy to make.

Plan B

Day 1: Mushroom, Cabbage and Thyme Pasta bake – I can’t resist a pasta bake!

Day 2: Quick Vegetarian Miso Ramen, a healthier version of the type of ramen you made at uni.

Day 3: Indian Spiced Cauliflower Lettuce cups, crispy golden deliciousness.

Day 4: Vegetarian Burrito Bowl with Haloumi, because everything is better with Haloumi.

Day 5: Eggplant and Potato Curry, a truly delicious curry you can make from scratch.

And this week’s bonus? These chocolate nougat bites are a dream.
