I’ve made these fritters for numerous parties and they’re always a hit. In this recipe I pan fry them in olive oil but I’ve also deep fried them in a wok before when I was being a bit more indulgent (it was New Years, it was a party, it had to be done). Both ways of cooking them produce crispy fritters studded with melty feta and full of flavour.

Oh yeah. These are happening. They’re like a a coconut rough cupcake but with green vegetables in them. Yesss please. Don’t freak out about the vegetable content, it’s there to give texture and zucchini is so mild and slightly sweet so it’s a totally fine thing to put in your baked goods. No more zany than carrot cake. So if you can get around carrot cake, you can get around these.

If you’re after a fun, quick and easy meat free monday idea then this recipe has you covered. I’ve been playing around with veggie patties for a while now and I’m finally really happy with one. This patty has a good ratio of vegetables and legume, and a flavour that doesn’t overwhelm the rest of the burger components, just gets a nice little harmony going on with them. And that’s exactly what I wanted from this burger.
ZUCCHINI AND PEA FRITTERS
These fritters are fresh and full of flavour. The zucchini and pea can be paired with whatever fresh herbs you have on hand to give it an extra oomph but are also tasty without. They use buckwheat flour so are also grain and gluten free, but you could use any flour you like. I’ve used a mix of almond and coconut flour before too.
