It’s that time of the year again. The time for soups. And the time for cauliflower. Two things I am happy to post about regularly sorry if it gets boring. Actually I’m not sorry at all, cauliflower is delicious. As is soup.
VEGETARIAN TIKKA MASALA
I love curry, at all times of the year but in winter curry gains a special place in my heart. Anything spicy just makes me feel warm inside and curry is comfort food. This one is full of vegetables and super filling. It’s the perfect weeknight meal and freezes well too, and that means on a future weeknight your meal will be even easier.

SATAY NOODLES WITH SWEET POTATO
CHOPPED SALAD WITH CHIPOTLE ‘MAYO’
This is a full on, full of flavour, full of texture and full of things kind of salad. That said it’s east to throw together and is one of those salad’s that people actually go back for seconds of even when there’s meat on a table because it tastes so good. Just look at all those colours!
ROAST CAULIFLOWER, KALE AND MACADAMIA SALAD WITH BURNT BUTTER DRESSING
Winter salads are a lunch staple for me. If you didn’t notice by my onslaught of salad posts on the blog at the moment. This one has lovely mellow flavours happening and can be eaten hot or cold. Also it has macadamias and a burnt butter dressing going on. You know that’s going to be good.
HONEY THYME ROASTED CARROTS WTH SPICY ZA’ATAR AND SWEET POTATO NOURISH BOWL
This is a nourishing bowl of goodness. The sweet and sticky carrots, bright green peppery rocket, creamy labne, spicy za’atar mix and filling quinoa and lentils make for a delicious lunch or easy to throw together dinner. Everything can be prepped early and be waiting for you in the fridge to grab and take to work.
PUMPKIN AND FETA BRUSCHETTA
The creamy caramelised pumpkin that tops this bruschetta can easily be prepared the night before for an indulgent week day breakfast or just add a poached egg and you’ve got a delicious weekend brunch. Sweet pumpkin, fragrant thyme and salty feta is a pretty classic combination, but perhaps you’re yet to eat it for breakfast?
GREEN GODDESS NOODLE BOWL WITH GINGER MISO DRESSING
This green goddess noodle bowl makes for such a delicious lunch. It can be eaten warm or cold, is full of green veg, buckwheat noodles and a tasty immune boosting ginger laced dressing. Plus it can be vegetarian, vegan or filled with whatever choice of protein you’re into. Versatile, easy food that works just as well for lunch as it does for dinner is what I’m all about.
MEXICAN RAINBOW SALAD
This salad has a lot going for it, such as a whole rainbow of colour. Not to mention it’s super filling, full of protein, complex carbs, fibre and all the vitamins from that pretty array of vegetables. Speaking of pretty it also has that and I do think eating pretty food makes it taste better… we eat with our eyes and all that?
