This chickpea salad is the perfect thing to top avocado toast, have along side grilled meat or fish, or just eat for lunch along with some soft boiled eggs. I also love it as part of a mezze spread.
TWICE COOKED MEATBALLS IN SPICY GOCHUJANG SUGO
Yeah, you read that right. That word is definitely not Italian is it? But sugo is. Gochujang is a a spicy fermented bean paste from Korea. And it’s pungent sweet and spicy notes give a totally new and really interesting twist to traditional spaghetti and meatballs. I know it sounds like weird fusion cooking but it’s full of flavour and defines ‘winter warmer’.
PITA CHIP VEGETARIAN ‘NACHOS’
Confession: these aren’t really nachos. They aren’t made using corn chips because when they craving took I only had some slightly less than fresh pita bread on hand. I hate waste so wanted to use it and these were born from what was in my fridge/pantry. The perfect lazy, waste free dinner and so delicious I made them 3 times in a week.

A simple and satisfying dinner that can be changed up to suit whatever you’re craving. The sauce is punchy and delicious. Full of flavour from roasting the veg and the texture means it coats the pasta beautifully.
SLOW ROASTED TOMATO PASTA
Healthy meals shouldn’t be difficult and sometimes you need a simple pasta dish up your sleeve. And this one is a winner. Plus it’s perfect for summer as that’s when these ingredients are at their tastiest. The key to this pasta is quality produce, you need ripe flavoursome tomatoes, fragrant basil and good quality oil and balsamic.
CHILLI CHUTNEY
Chilli and tomato are great friends. And this is a great homemade sauce to add pizazz to sandwiches, burgers, wraps, have with roast vegies or meat. It’s free of nasty additives and full of flavour.
