Chipotle Tofu Bowls? Heck yes I’m in! You all know by now that I love ‘bowl food’ and have probably caught on to my love of Mexican too (recent enchilada and tortilla soup posts might have hinted at this..). If you’ve really be paying attention you may also have noticed that I’m getting into the occasional serve of tofu too.
Crunchy golden tofu pieces in a spicy salty sauce with toasted sesame seeds, hell yes! Put it all on top of a pile of fine rice noodles and fresh slaw and I’m a happy girl. This is by no means a traditional bun bowl with all the right flavours and – but they were the inspiration, so don’t get angry at me for my description. Let 2017 be the year of you having fun with your food and letting go of the rule book.
I’m going to start this post by saying I’m not really into tofu. I think it can be really bland sometimes and I’m not always into the spongy texture. This tofu is none of those things. This tofu I love. It’s crispy on the outside, smothered in satay sauce and nice and soft in the centre. This is the tofu that has converted me.
