Um so this is a delicious bowl of my favourite thing. Stir fried red cabbage hit with soy and sesame seeds for extra yum. Crispy pieces of tofu with salt and pepper seasoning. Satay dressed noodles tossed with greens. Yes yes YES.

Confession time: I’ve eaten tofu just once since I’ve been away and that was in ma po tofu which isn’t even a vegetarian dish. And this is super unusual because it’s usually a once a week staple for me. So in ode to the missing tofu in my life I have 7 ways to eat this delightfully versatile food for you;)
Tofu and Spinach Pot Stickers (Vegan)
Dumplings. I’m obsessed. There are numerous recipes on this blog for dumplings as I make them about once a month and love to try new fillings. This tofu one is a real winner, they’re flavoursome and have great texture. This is not the shortest recipe on the blog but it’s not hard to do and if you have an extra pair of hands helping you then it’s pretty quick!
Crispy Tofu with Broccolini and a Miso Broth
This is so easy to make and such a friggin’ delight. The crispy tofu is soft inside and if you cut into it with a spoon and get some of the broth to slurp up with it it’s just the most delightful bite on the flavour and texture fronts.

I have always loved silken tofu but I’ve never used it at home. No idea why because it’s so easy! In this recipe you don’t even need to cook it and the creamy texture is so lovely with spicy mushroom sauce.

I haven’t made a buddha bowl in what feels like ages and this was just what I needed. Golden coconut coated tofu, roasted kale and lightly pickled carrot with a creamy avocado and peanut sauce or piled on top of quinoa – perfect.

I had to put the word creamy in the title because otherwise this guy just screams HEALTH and I didn’t want to scare everyone off. Plus it is creamy so why wouldn’t I mention that? This curry is delicious! I’m a big fan of tofu these days and this curry comes together pretty quickly with a big punch of flavour.
MISO AND GINGER TOFU CURRY
This curry is like a love child between ramen broth and a coconut curry. I wanted the curry ‘gravy’ to have that flavour bomb thing going on that you get with ramen but to be served over rice like a curry. And wait for it… I cooked tofu in a pan not the oven for once! Turns out I can let go of my safety net!

I finally tried a slightly different way of cooking tofu and I’m such a big fan! It’s like eating chicken schnitzel – really! I’m clearly excited about this and you should be too.
