I made this for the first time months ago and have been meaning to retest the recipe forever, and when I found these tri coloured baby carrots and my local market I knew it was time. That said you can easily use whatever carrots you can get your hands on. These babies just look oh so pretty.
Cauliflower Melts
Open faced sandwiches topped with crispy cauliflower and a creamy, cheesy sauce, what could be better? How about if I told you that creamy luscious looking sauce is made from cauliflower too? So much vegetable goodness in each bite.
Zucchini, Avocado and Feta Bruschetta
Food doesn’t need to be complicated, sometimes keeping things fresh and simple is the best. This bruschetta works well as a starter, a lunch, a breakfast or even a dinner. Just add an egg if you want more protein than the feta provides! The flavours are light and fresh with creamy avocado to make it extra filling.
Miso Butter and Enoki Mushrooms on Sourdough
Not every meal needs to be a  production. Sometimes all I want for lunch or dinner is just some beautiful fresh bread topped with something tasty. And these ‘shrooms are so tasty. It’s ind of like the vegetable and fancy equivalent of vegemite on toast thanks to the  complex miso butter flavour.
VEGAN FRENCH TOAST
Dessert for breakfast? Or breakfast for dessert? Whatever your preference this vegan French toast will keep you happy. I’m not vegan and I’m still a big fan because it’s a little bit lighter than the traditional variety, the bread gets crisp and it’s lightly flavoured with the natural sweetness of the vanilla and cinnamon it’s soaked in.
7 WAYS TO REINVENT YOUR MORNING TOAST
Vegemite on toast is delicious it’s true, as is peanut butter, but having the same thing all the time can get seriously boring. Here’s some nutrient dense, refined sugar free ways to start your morning with a bang. And I promise it’s not just avocado toast 7 ways 😉
MISO AND MINT BROAD BEAN TOAST
Broad beans are delicious, and if you’re screwing up your face right now maybe you just haven’t eaten fresh, double podded broad beans before? Because if you haven’t you are missing out on some serious yum. Plus things on toast are great. Thus this recipe has two great things going for it.
