Guac and corn chips… is there any better snack? This is a favourite late afternoon nibble of mine (or as a series of nibbles with drinks, including popcorn cauliflower florets and spicy sweet potato crisps). It’s a super simple snack and you probably don’t even need the guac recipe but this is how I like mine! I know you wanted to know ha. And guess what? Baked corn chips are friggin fantastic! Skip the fried and pop some tortilla’s in the oven.
RAW STRAWBERRY CHEESECAKE SLICE
Another dairy free, vegan, gluten free cheesecake miracle! This one is a little simpler, fresher and more pink than my other cheesecake slice. An oat and almond base is topped with strawberry cashew ‘cheesecake’ filled with chunks of fresh strawberry and a swirl of strawberry puree. It’s delicious and very pretty.
SPICY SWEET POTATO CRISPS
I clearly had no idea what to call these. They are sweet and tangy and crispy and fresh. And spicy. Well as spicy as you want them I guess! It’s also sort of a salad. Or a nibble. Or a side dish. Or even a bar snack, along with popcorn cauliflower florets of course! The crisps themselves are baked rather than fried and placed on a mixture of sauces (green thai curry, molasses, black vinegar). They are then topped with a light and fragrant salad of fresh herbs and spices. It’s all a bit magical and crazy really, thus the trouble with the name.
‘POPCORN’ CAULIFLOWER FLORETS WITH YOGHURT, FETA AND BASIL SAUCE
WARNING: these are very addictive, I almost ate a whole head of cauliflower by myself and that amount of cauli would do bad bad things to me… a narrow escape… Very narrow, I kept moving them further and further away from me and eating more each time I moved them. Idiot.
MAPLE AND CHILLI ROASTED NUTS
This recipe combines three ingredients that I find very addictive. And adds a bit of salt to them, so you know all self control is out the window. Maple. Chilli. Roasted Nuts. They are sweet, spicy, salty and ridiculous. My boyfriend has also humbly pointed out that he made a chilli and honey peanut version of these a while back so I am stealing his ideas. My dad all makes maple glazed pecans all the time so I guess I amalgamated both their recipes and made it mine, mine, mine. Haha happy holidays and all that stuff – get roasting!
‘ICE CREAM’ SANDWICHES
I am sitting on my bed with the sun streaming through the window eating ‘off cuts’ of these while I write this. Well if I’m being honest I actually finished eating while I waited for my computer to start up….
BANANA BREAD
This is so delicious. I made this a month or so ago but sometimes I dream about it. It fills the house with such a delicious smell. And slathered in peanut or almond butter – or just plain butter – it is ridiculous. This also passed the boyfriend test and he is both a lover of sweet things and banana bread so I feel that speaks volumes.
KALE AND BASIL SUNFLOWER SEED PESTO
This guy packs a lot of punch, both in nutrients and in flavour. It is fantastic added to pasta, pizzas, sandwiches, or with seafood or meat. It’s also good just with some avocado on toast or rice crackers. Seriously yum. I suggest you use a mortar and pestle for the sunflower seeds (or everything if you have a big one) as I find you end up with a better texture overall but I guess it depends on your food processor!
CHOCOLATE DATE AND ALMOND BLISS BALLS
These could be called chocolate, date, almond, coconut bliss balls as they are rather coconutty too. But then I would just be listing ALL the ingredients. Well almost. Super simple to make and a delicious snack. For whatever reason they taste better after they’ve rested in the fridge for a bit. I don’t know how long this phenomenon occurs for though as they only lasted 2 days in my house!
