I’m feeling indecisive. I knew all the flavours i wanted to eat but I couldn’t decided whether i wanted to have a pretty salmon with sauce and salad thing or if a quinoa bowl was more my vibe. So I made this dish both ways to see what was best. Turns out both are best, depending on level of hunger/patience for plating. Well hey there summer! Time for long nights sharing food with friends in the evening sun – and these are just perfect for that. The fresh prawns, creamy avocado and sweet corn are amped up with a little chilli and lime to make for a super tasty snack or starter. As a bonus they’re super easy to make too.

The perfect thing when you want something, light, quick and nourishing. Green vegetables and omega 3 rich ocean trout make for a well balanced meal, especially when you serve it with some brown rice to soak up the delicious sesame and ginger dressing. You can have a healthy and oh so tasty dinner ready in about 20 minutes, and that’s a win in my books.
