I don’t know what to call this other than glorious. A wonderful woman I met on a retreat, Anne, was telling me about one of her favourite things to do with zucchini and I had to try it and this is my version of it. Ridiculously simple but a real revelation in terms of flavour. i’m loathe to post my 20th zucchini recipe of the year but I can’t help myself. I’m sorry, but also not at all because why am I apologising for giving you yet another free zucchini recipe?!
Creamy Herb and Pea Pasta
This pasta sauce can also be dolloped over a salad bowl or spread on bruschetta – it’s punchy herby, creamy deliciousness. But with no cream because I’m trying to make pasta better for you!
Gnocchi in a Rich Eggplant, Tomato and Basil Sauce
This recipe is all about that sauce combining with the tender potato gnocchi. And wow that sauce. It’s full of deep umami rich flavour thanks to the sweet and sticky sundried tomatoes and sherry. And full of freshness form the basil. The ability of the eggplant to soak up flavour is what really make sit. Along with a good lug of extra virgin olive oil.
GREEN CHICKEN SKEWERS WITH HARISSA SAUCE
These chicken and vegetable skewers are delicious and an easy way to get a range of protein and vegetables on your plate. The marinade makes the chicken super taste and it’s actually quite flavoursome just by itself. But that sauce is bright and delicious too and kind of takes things to a new level.
KOREAN BBQ TOFU BOWLS
SPAGHETTI WITH ROMESCO SAUCE AND BUFFALO MOZZARELLA
A simple and satisfying dinner that can be changed up to suit whatever you’re craving. The sauce is punchy and delicious. Full of flavour from roasting the veg and the texture means it coats the pasta beautifully.
CHILLI CHUTNEY
Chilli and tomato are great friends. And this is a great homemade sauce to add pizazz to sandwiches, burgers, wraps, have with roast vegies or meat. It’s free of nasty additives and full of flavour.
PARSNIP FRIES WITH HARISSA DIPPING SAUCE
Is there anything better than fries? That crisp outside and instant dippability (it’s a word, shut up spell check). Actually anything that you can dip into a tasty sauce is pretty fabulous in my book (sweet potato crisps, popcorn cauliflower). These parsnip fries have a lot going from them, parsnips natural ability to caramelise is definitely one of them. The natural sweetness of the parsnip is so good with the spicy harissa sauce.
SPICY BBQ SAUCE
The sweet, tangy, smoky flavour of barbecue sauce is so addictive. This is my healthier version. It still contains sweetener, however I have used much less than in the usual recipes. The recipe also calls for passata instead of ketchup and a bit of an extra chilli kick because I love the stuff. This is a more of a ‘Kansas City style’ barbecue sauce, so it has a strong tomato base flavour, with a nice balance of sweet, vinegary and spicy notes to finish. The coconut sugar adds that molasses note even if you don’t use the molasses.
AVOCADO, BASIL AND YOGHURT DRESSING (AKA SHREK SAUCE)
I have to thank my mum for this little creation, a few weeks ago she asked me to make a green salad for a Sunday feast we were having (these are a weekly event, Dad cooks entree and mains and Mum comes in with a spectacular dessert – it’s a wonder I’m not obese!), and I decided to take her very literally haha. Everything I put in the salad was green (cos lettuce, cucumber, finely sliced celery, parsley, pumpkin seeds etc) and to up the greenness I wanted to make a bright green dressing. And voila, this happened. It is super tasty, full of nutrients and oh so creamy.
