Winter salads are a lunch staple for me. If you didn’t notice by my onslaught of salad posts on the blog at the moment. This one has lovely mellow flavours happening and can be eaten hot or cold. Also it has macadamias and a burnt butter dressing going on. You know that’s going to be good.
COCONUT CURRY NOODLE SALAD WITH CORIANDER PEANUT PESTO
I love the mix of soba noodles and vegetable noodles in this salad. The soba noodles are filling and if you use the buckwheat variety, some what nutty, the xoodles are tender and fresh and the carrot noodles (coodles?! nope, probably not) keep their crunchy. They’re all then dressed in the delicious creamy dressing and finished off with more vegetables and that vibrant pesto. Yum.
HONEY THYME ROASTED CARROTS WTH SPICY ZA’ATAR AND SWEET POTATO NOURISH BOWL
This is a nourishing bowl of goodness. The sweet and sticky carrots, bright green peppery rocket, creamy labne, spicy za’atar mix and filling quinoa and lentils make for a delicious lunch or easy to throw together dinner. Everything can be prepped early and be waiting for you in the fridge to grab and take to work.
MEXICAN RAINBOW SALAD
This salad has a lot going for it, such as a whole rainbow of colour. Not to mention it’s super filling, full of protein, complex carbs, fibre and all the vitamins from that pretty array of vegetables. Speaking of pretty it also has that and I do think eating pretty food makes it taste better… we eat with our eyes and all that?

SPICED MINCE WITH GREEN BEANS AND HOMMUS
This might seem like a strange meal to some but it is seriously more-ish. The cucumber salad on the side brings everything together and you’ll end up licking the plate. Such a great meal to share. It’s also pretty easy to whip up and full of vegetables, protein and fibre – perfect.
HEALTHY LUNCHES, ZERO PREP
These lunches are aimed at people who have a work kitchenette and actually get a lunch break – but have limited time for lunch prep outside of work. Or, like me, maybe some days you’re just not that organised and need something you can throw together at the start of lunch that’s more nutritious than two minute noodles (and isn’t a tuna salad).
RAINBOW NOODLE SALAD WITH CORIANDER AND PEANUT PESTO
This baby packs a flavour punch + is filled with loads of veg to help you get your daily fix. You could make it with any noodles you have on hand and it will work out just fine. I know I’ve posted a few noodle based recipes lately but that’s because they’re so good for this warm weather we’ve been having, a 30 degree spring days (celsius for you international peeps) is crazy for Melbourne, so maybe I’ve gone a little crazy for cold salads too. Just maybe.
BREAKFAST SALAD
This makes for a fantastic grab and go, pre prepped for your morning rush breakfast solution. Yes salad is your breakfast solution. Because it’s acceptable to eat salad at all other times of the day so why not breakfast? I know fruit salad is a breakfast staple but I don’t really like fruit salad. It makes me think of nasty hotel breakfast buffets or syrupy concoctions. This is a savoury salad, full of greens and they typical things you might eat for breakfast – just in a salad.
VERMICELLI NOODLE SALAD
This salad makes a delicious dinner when the weather gets warm and an easy lunch. You can make it the day ahead and take it to work. As you’ll see it’s seriously simple to make, simple food is where it’s at for week day lunches.
