I might be a little obsessed with this pesto and this salad. And the two together. Mostly the two together. There’s something about potatoes smothered in pesto that’s all kinds of right. Plus potato salad has long been a favourite food of mine… I just don’t usually make it this green!

Yum yum yum! This salad is warm, and comforting and full of flavour. It’s also loaded with vegetables and totally winter appropriate. The crunchy toasted coconut, crispy bits of roast cauliflower and caramelised pumpkin are a killer combo. Especially with miso and sesame paste coating it all. Yes, yes, yes.

This salad is full of flavour and texture thanks to the creamy dressing, crunchy almonds, sweet pumpkin and fresh spinach. The perfect prep ahead work salad. Just don’t toss it all together until you’re ready to eat.

HALOUMI, ZUCCHINI, TOMATO AND PEARL COUSCOUS SALAD
This is a very summery couscous salad made super delicious with… HALOUMI. Because cheese if life and haloumi is so golden and salty and delicious. It’s one of my favourite cheeses because of how it is transformed in heat. It also takes this salad from side dish to lunch by adding a little extra protein to satisfy.

I love a salad bowl. Clearly. And at this time of the year a grilled chicken salad is what I feel like eating most of the time. This is also delicious with a boiled egg or some haloumi (seared in a non stick pan) instead of the chicken if you’re into a more vegetarian vibe.
CHICKEN SCHNITZEL WITH PARMESAN SLAW
This might be my favourite dish yet this summer. or at least my favourite chicken dish. I have a lot of favourites when it comes to food. And any way I can have chicken schnitzel in a healthier way is pretty damn exciting for me. This has all my favourite things about schnitzel: golden crispy exterior, succulent juicy chicken and great flavour. It has all these things with out being laden with oil from deep frying – yay.
CRISPY CHICKPEA BOWL WITH SLAW, CREAMY SPINACH DRESSING AND QUINOA
This is an easy work lunch or vegetarian dinner. The flavours are fresh and simple, just what you want in summer! As far as these sort of colourful bowls go it’s blissfully simple to make and full of all the flavour, texture and yum you could want.
