Bringing porridge into spring with this little number! I know rosewater isn’t everyone’s cup of tea but I love it’s delicate sweet flavour. It’s sort of liking eating spring. And if you’ve ever cooked with it you probs have a big bottle languishing in the pantry, here’s how to use it up;)
BANANA BREAD OATS
I have been eating porridge most mornings lately. This is super unusual for me, not because I don’t like porridge, I’m all about it, but because I just don’t eat the same thing multiple mornings in a row. I’ve been changing it up a little bit in terms of porridge flavourings but this is the one that’s been on highest rotation. It’s oats, but it tastes like banana bread so what’s not to like?!
PEANUT BUTTER AND RASPBERRY PORRIDGE
STRAWBERRY AND VANILLA BEAN PORRIDGE
It’s a weird time of year in Melbourne. We’re oscillating between smoothie and cold drink weather and warm porridge weather. Sort of typical Melbourne really. This porridge straddles that fence nicely. Strawberries are abundant at the moment as the weather heats up around the country and they are so delicious teamed with the vanilla scented creaminess of this porridge.
CHIA AND OAT PORRIDGE WITH KIWI, BANANA AND PEPITAS
This is one of those recipes where the whole thing is almost in the title. But it’s very good. Really creamy and tasty with loads of nutrients. It’s also exactly what I need to eat at the moment as work has started again and I all of a sudden need to eat breakfast way earlier and thus stay full for longer. This does the trick.
SAVOURY PORRIDGE WITH POACHED EGG, CORIANDER AND CHILLI
Savoury porridge… What the?! Well this idea is nothing new… think congee. It’s just my take on it and if I do say so myself (and I’m the one who ate it so I’m in the best position to call it) it was really delicious. Despite my boyfriend telling me not to ‘mess with porridge’, I will be making this very often, because sometime when you mess with stuff magic happens. It’s also full of nutrients: fibre and protein from the oats, protein and healthy fats from the egg, calcium from the tahini, and the vitamins and minerals provided by the coriander and chilli (and whatever other veges you top with). The tahini also lends a delicious rich creaminess to the porridge. Yum.
LEMON DELICIOUS PORRIDGE
It’s getting cold in Melbourne and the crisp mornings have me craving porridge, and I’m trying to mix up my combinations as much as possible. This is a dreamy dessert like porridge. It’s reminiscent of a lemon delicious pudding or a lemon tart with the combination of creamy vanilla scented oats, tart lemon curd (without cream or butter) and toasted almond crumb. But it makes a much more nutritious breakfast than either of those options, thanks to the oats and added nuts!
