This tart is such a delight, you can make it with regular chard or silverbeet but it just won’t look as pretty. And it sure is pretty thanks to the contrast with the white ricotta and colourful rainbow chard stems.
Plum and Vanilla Galette
Here it is, my final festive recipe for the season… and look how pretty it is! Plus it’s very simple to make with the easiest pastry ever. There’s no resting needed, no butter, no special equipment. It looks impressive and you can make it without any added sugar at all, so go ahead and eat it for breakfast 😉
MUSHROOM, KALE AND LENTIL VEGETARIAN SAUSAGE ROLLS
Who doesn’t love a good sausage roll? We do these so well in Australia and I’ve been branching out occasionally recently and doing something I never thought I would. Eating vego sausage rolls. Sorry, ‘sausage’ rolls. I’m still calling them that as they’re the right shape and the same idea but just filled with veggies! Super nourishing and filling and all encased in flaky puff pastry.
MINI MAPLE LEMON TARTS
These lemon tarts look adorable, are super zesty and have the added bonus of being made with olive oil whole grain pastry and no dairy. They also are refined sugar free, sweetened with maple syrup, and nut free. You could make them with gluten free flour if you would like them to be gluten free but I’ve chosen spelt and wholegrain flour for their rich nutty flavour.
BEETROOT, SPINACH AND GOATS CHEESE GALETTE
All the things about this tart make me very happy. Earthy, sweet beetroot, bright green spinach, the pretty beetroot greens and the creamy goats cheese. This is a fairly classic combination, but I’ve included a few tweaks in this recipe to include more vegetables and use some of my favourite things. The result is a nutty, sweet and salty tart that I love for lunch or dinner.
