I am aware this sin’t my first ‘quick ramen’ recipe but it’s one of my favourite things to eat for dinner so I will keep coming up with variations and sharing them with you. That by no means indicates any level of authenticity. if I’m making ramen at home it isn’t going to be like the ramen experience at a restaurant as I’m just not going to spend that much time making something that I love for how quick it is! That said, it still has to be delicious.
LIME, GINGER AND SESAME SOBA NOODLE SALAD
I am working normalish hours for a change in the lead up to my holiday, and not from my own home, so it means that I actually have the opportunity to test my work lunch recipes on me me me! This salad is super tasty, and the perfect thing to make for work lunches as it takes very little time – ideal right?
THAI RED CURRY BEEF STIR FRIED NOODLES
My new thing is using curry pastes and a little stock or coconut cream to create the flavour and sauce. It’s so quick and easy and packs a huge flavour punch! You can make your own paste and freeze in portions or keep in the fridge if you plan on using it quickly, or just buy one. So many options to make your life tasty, healthy and easy.
RICE NOODLE BOWLS WITH THAI PEANUT SAUCE AND SESAME TOFU SCHNITZEL STRIPS
I finally tried a slightly different way of cooking tofu and I’m such a big fan! It’s like eating chicken schnitzel – really! I’m clearly excited about this and you should be too. You’ll probably see this rendition popping up again but for now it’s finding a place in a noodle salad bowl and you’re going to love it.
ONE POT 15 MINUTE CHICKEN NOODLE SOUP
Just like a cup a noodle soup, but delicious and wholesome and not full of nasty things. This is loaded with flavour and light on the dishes you’ll be eating this one on the reg.
ASIAN MEATBALLS ON RICE NOODLES WITH A CHILLI GINGER AND SESAME SAUCE
I love spaghetti and meatballs. I love Asian food. I also love green vegetables. Therefore, this dish is everything to me because it has all those things. Oh and chilli and sesame and they’re always my go to flavours. This is basically my heaven.
SOBA NOODLE SALAD WITH TAHINI DRESSING, BROCCOLI AND SOFT BOILED EGG
WASABI AVOCADO, EDAMAME AND PINK GRAPEFRUIT NOODLE SALAD
The noodle salad is made with a mixture of ribboned carrot ‘noodles’ and rice noodles. The combination of fresh and pickled vegetables with the spicy avocado dressing a tart grapefruit is so refreshing you’ll be craving this when the warm weather really sets in.
AVOCADO AND EGG RICE PAPER ROLLS WITH PEANUT AND LIME DIPPING SAUCE
Does that sound weird? Because it shouldn’t as avocado and egg are obvs amazing together. And the thin slices of mirin seasoned omelette make the perfect vegetarian rice paper roll filling. And that dipping sauce, oh it’s good.
BURMESE STYLE NOODLES WITH MUSHROOM CURRY SAUCE
The Burmese style curry noodles are so versatile and full of flavour. They’re a take on a dish that usually involves noodles with a meat sauce and your favourite toppings. So sort of like a Burmese version of spag bol! Sort of haha. This version involves a mushroom rather than meat based sauces but I’ve included instructions for a variation using chicken and one using prawns because variety is the spice of life and all that jazz (also I couldn’t choose just one version).
