The peanut curry soup base pairs so delightfully with the light and fragrant meatballs. You can even make the meatballs in advance for a quick week night meal. this isn’t a big bowl of soup, the soup base creates a sauce that the noodles poke out of and coats everything in deliciousness.
Tofu and Cashew Noodle Stir Fry
This dish is a firm favourite (get it cos it uses firm tofu? I am the worst!) and uses the umami goodness of mushrooms and soy sauce to amp up the flavour dial on tofu. The result is a delicious stir fry with flavour and texture in every bite, and it’s vegan to boot.
Creamy Pesto Noodles with Roast Tomatoes and Chickpeas (Vegan)
This is an idea I got from my friend Alice that is staying with us at the moment – my housemate and her are doing a Gut Makeover and needed to keep it dairy free and gluten free and you miss neither with this recipe!
Salmon and Mushroom Ramen with a Ponzu Broth
This is my kind of winter comfort food. Noodles and broth to slurp with plenty of vegetables and protein. The salmon is gently cooked in a fragrant broth that’s seasoned with ponzu, so many levels of yum.
Vegan Tempeh and Vegetable Ramen
Oh my oh my, another tempeh recipe, if you’d told me two years ago I’d be eating tempeh I would not have believed you. And boy do I get argumentative when I think you’re full of it. it’s not always pleasant for the full of it person… or me when it turns out I was in the wrong. But I’m into tempeh now… well sometimes, when it’s cooked in ways I actually like. And this definitely is one of those ways.
Bok Choy and Pork Soba Noodle Bowl
I couldn’t decide what to call this and was going to go with Lo Mein, then realised that through numerous. However it does have those tasty take out vibes and the noodles are coated in this slurpy yummy pork minced laced sauce and it’s served with stir fried bok choy on the side and a soft boiled egg so it’s great if not legit.
SKILLET LASAGNE WITH RICOTTA AND GREENS
This dish was a happy accident. I made a kale and lemon pappardelle, and then accidentally left the pan on with the leftovers in it. The pasta got all golden and crispy on the bottom, as did he make and the Parmesan melted through it and it was BETTER. A few other changes later and we have the beautiful, wholesome and easy to make skillet ‘lasange’.
SALMON SOBA BOWLS WITH MISO GINGER BROTH
THAI RED CURRY NOODLE SOUP, RAMEN STYLE
This noodle soup is totally a Japanese Thai hybrid thing, and it’s amazing. Like all my noodle, soup, and curry dreams coming true.
QUICK AND EASY HANGOVER NOODLES
The whole point of these noodles is to be quick, easy and full of some goodness. I’m not sure about you but sometimes the celebrations get away with me and it only takes one glass too many of wine and I am not feeling my healthiest the next day. I like to avoid the potful of hangovers, eating all the fried food and drinking sugary things, as often as possible. I mean, we’re all human but there’s no need to stack on the punishment for your body right? These noodles are your saviour.
