I am aware this sin’t my first ‘quick ramen’ recipe but it’s one of my favourite things to eat for dinner so I will keep coming up with variations and sharing them with you. That by no means indicates any level of authenticity. if I’m making ramen at home it isn’t going to be like the ramen experience at a restaurant as I’m just not going to spend that much time making something that I love for how quick it is! That said, it still has to be delicious.

GREEN GODDESS NOODLE BOWL WITH GINGER MISO DRESSING
This green goddess noodle bowl makes for such a delicious lunch. It can be eaten warm or cold, is full of green veg, buckwheat noodles and a tasty immune boosting ginger laced dressing. Plus it can be vegetarian, vegan or filled with whatever choice of protein you’re into. Versatile, easy food that works just as well for lunch as it does for dinner is what I’m all about.
MISO CARAMELISED EGGPLANT IN LETTUCE CUPS
I never used to be an eggplant fan. It was too often, butter, soggy or watery. I’ve learnt that when it’s cooked in certain ways it is so delicious. This is one of those ways, in this little recipe the eggplant becomes meaty and laden with umami rich flavours from the miso paste. The crisp lettuce cups are a perfect foil to this salty richness.
MISO AND MINT BROAD BEAN TOAST
Broad beans are delicious, and if you’re screwing up your face right now maybe you just haven’t eaten fresh, double podded broad beans before? Because if you haven’t you are missing out on some serious yum. Plus things on toast are great. Thus this recipe has two great things going for it.
MISO BUTTER GLAZED ASPARAGUS
The first time I bit into these charred and glossy spears I swore, with pure joy. And then I went and boiled an egg because I thought that would be amazing with them and called it lunch. I ate all the asparagus (whoops, that’s apparently not a great idea…). Then I licked the bowl. These are seriously that good. And I do realise I’m talking about asparagus.
