This recipe can be made in less than 40 minutes which means it’s totally doable on a weeknight. The vegetarian filling is what makes it so quick and easy to cook. It’s also full of flavour, and super filling thanks to those chickpeas.
Healthy-ish Chicken Nachos with Chipotle Cheese Sauce
There’s a lot of things about these nachos that make them a healthier choice than the regular variety. Baked wholemeal tortilla chips (or corn if gf) rather than fried chips, the added green veggies and wholesome chicken thigh topping. There’s also a cheese sauce that’s the ish part because it makes the cheese go a long way and adds that gooey stretchiness you want in nachos, with about 1/2 the actual cheese. But still some cheese because, oh god, cheese will be the last animal product I give up if I ever actually go vegan.

Chipotle Tofu Bowls? Heck yes I’m in! You all know by now that I love ‘bowl food’ and have probably caught on to my love of Mexican too (recent enchilada and tortilla soup posts might have hinted at this..). I feel like this soup’s a bit naughty. Not in a bad for you way but because it’s using a summery ingredient in a winter recipe. But you know what? Sometimes a girl just wants what a girl wants and sometimes she finds a whole lot of roma tomatoes that might come from another state but at least they’re from this country so leave me alone. This soup is worth my ethical guilt.
