After watching so many people make the viral baked feta and tomato dish that Liemessa started making, I knew that this was one food trend I wanted to get involved in. I mean I love pasta so why not?! But it’s summer and I also love salad, and I’ve been weirdly craving lentils. So this happened instead. All the flavours of that pasta but in a lentil salad. It’s so good. I still love the pasta version too though!

It’s soup season people!! I mentioned in my last post that my friends and I have started a soup club, each week 2 of us make soup for the 6 of us and this week it was my turn. This warm, yummy spiced soup was my contribution.
Pumpkin Dahl with Tomato and Spinach
This autumnal dahl is both comforting and fresh thanks to the coconut and lime flavours through it. It’s mild in terms of heat level and fragrant with the toasted cumin stirred through at the end. It comes together with very little effort so is a perfect midweek meal and the leftovers can be freezed for lunches.
ZUCCHINI AND LENTIL SALAD WITH PECORINO AND SPINACH YOGHURT SAUCE
This simple summer salad can be a side or a full meal. I love having it with a couple of soft boiled eggs on top for lunch – so delicious I kind of want to lick the plate. Maybe have, this is a safe private place for my confessions right? It’s really easy to throw together and tastes delicious.
CREAMY SPICED LENTIL DAAL
Yes I realise we’ve just had a heatwave of a weekend. But it’s cooled down a little now, and it’s winter in the other half of the world so I know some of you are going to feel like curry. Personally, I always feel like curry. I don’t think it’s just winter comfort food as a lot of countries that serve curry as a staple are typically warm balmy year round weather places. So this is summer appropriate. Plus it’s so friggin good. It’s my favourite dahl, creamy and fragrant and really easy to make.

DAHL MAKHANI (NO CREAM!)
Dahl makhani is usually a tomato based curry that is heavy on the butter and cream. I love it but that amount of butter and cream can leave e feeling a little ick. It could also be all the onion. So I came up with this onion free, lighter version that’s still creamy in texture and full of fragrant flavour.
