I love a rice bowl. And this one is a dream. Crispy brown rice, flavoured with lime, green chilli and coriander and topped with all the green things and an egg. You can play around with what green stuff you add depending on the season or just what’s in your fridge. You’ll probably find you’re putting all sorts of stuff on top of this rice because it’s basically the bomb.
CRUNCHY, SALTY, SWEET ADDICTIVELY GOOD PUMPKIN AND KALE SALAD
I could not think of a name for this to save myself. It has roasted pumpkin, crispy kale, caramelised pecans, salty feta, massaged kale and wild rice all in a lemony dressing. It’s ridiculous, addictively good stuff. And it’s a salad, how many salads are addictive? Salads with crunchy, salty and sweet notes definitely are. Everything in this salad is so good and different and balanced it makes you want to keep going back for more.
KALE, KIWI AND BANANA SMOOTHIE
I think everyone might have their own green smoothie recipe by now… and I’m sure you love your go to but I wanted to share mine. It doesn’t taste grassy or like kale at all but it’s full of it. I also love that vibrant green colour it goes – you just feel like your drinking health haha. And you are, this one has tons of vitamins and minerals, essential fats and fibre. Most importantly this tastes delicious.
SWEET POTATO AND CRISPY KALE FRITTERS
I’m really into making delicious meals out of what’s in the fridge and pantry at the moment rather than going and buying specific ingredients. It’s all in an effort to waste less and be more economical but it’s also kind of fun. Like playing ‘mystery box challenge’ with yourself – wow what a sad sentence! Anyway out of this habit has come some really great meals and this was one of them. Flavoured with ginger and turmeric and full of crispy edges and just tender sweet potato these are a great breakfast, lunch or light dinner idea. I highly recommend serving them with tangy greek yoghurt and a squeeze of lemon.
RAINBOW SALAD BOWLS
At the moment I’m all about lunch. I have a couple of go to favourite lunches. No. 1 is last night’s dinner (I am a lazy girl at heart!) and No. 2 is a rainbow salad bowl (which often involves last nights dinner ha). They’re such a great way to get loads of high nutrient unprocessed foods into your diet and are ridiculously tasty. Also, you never get bored of them because they can be varied endlessly. This post gives you a set of guidelines of what to include to be sure of a delicious and nutrient packed lunch, but remember they are guidelines, not rules, so take the reigns and make your salad bowl your own. The key is to get the balance right.
KALE, LENTIL AND POMEGRANATE SALAD
For me, summer means salad and BBQs and this salad is delicious with barbecued anything! It has great flavours and textures and is full of a variety of nutrient dense ingredients. I think kale has such fantastic flavour and texture when it’s treated correctly… but sometimes big undressed pieces of it can seem grassy or have a bit too much bite. Whenever I use it raw in a salad I like to roughly shred it and allow it to soak up flavour, it keeps its great texture still but doesn’t over power other ingredients. The lentils and quinoa keep mean that it works as a whole meal as well as in smaller portions as a side.
ZUCCHINI NOODLES (COURGETTI) THREE WAYS
I love pasta and stir fry. I also love vegetables and try to get as many of them in my diet as possible and a vegetable spiralizer is a fabulous way of doing this. The below recipes are some of my favourite ways to eat ‘zucchini noodles’ or ‘courgetti’ or spiralized zucchini if we’re going to be all honest about what food really is 😉
KALE AND BASIL SUNFLOWER SEED PESTO
This guy packs a lot of punch, both in nutrients and in flavour. It is fantastic added to pasta, pizzas, sandwiches, or with seafood or meat. It’s also good just with some avocado on toast or rice crackers. Seriously yum. I suggest you use a mortar and pestle for the sunflower seeds (or everything if you have a big one) as I find you end up with a better texture overall but I guess it depends on your food processor!
