This is an easy and delicious salad that works just as well as a filling dinner as it does as an easy-to-batch-cook work lunch. The flavours and textures are great together plus the mixture of protein sources and complex carbs mean it’s super filling.
BAKED SALMON WITH CITRUS HERB YOGHURT SAUCE AND GRAIN SALAD
Salmon baked in a bag for the win! It’s 2017 and I feel like this recipe is a bit of a 90’s throw back or something. But done in a modern way with the healthy grains and shredded veg right? I think… Anyway this is super easy and you can use any grains you like. I love the nutty combo of barley and quinoa with the vegetables and omega 3 rich salmon.

This chickpea salad is the kind of salad that will have a chickpea salad hater scooping up every last chickpea. Seriously. That dressing and chickpeas are meant to be. It’s a love story. A Parmesan laced love story.
LENTIL AND FREEKAH SALAD WITH APRICOTS FETA AND RED CABBAGE
This is sort of the third salad I’ve posted this week… whoops! This was clearly not well planned, but it’s all I feel like eating at the moment. This one is super filling due to the lentils and freekah and can easily become a stand alone meal with the addition of some grilled chicken or a soft boiled egg. Perfection.

I’m a big grain bowl fan. I usually make a different combination every second week, using different vegetables and dressings to make the usual seem like something new and shiny. This one is delicious and great for clearing out the pantry when you’ve got little bits of this and that when it comes to grains.
