I love using oats in baking, their higher protein content makes them so filling, in a long lasting way that almost allows me to stop at just one of whatever I’ve made. Almost. These muffins are made with lovely wholesome ingredients and have just enough sweetness to feel like a treat.
SUMMER STONE FRUIT CRUMBLE
This crumble is the perfect way to use up stone fruit that might be getting a little over ripe or that you have an excess of. It’s also just a delicious was to eat it. It’s completely dairy free and lower in fat and sugar than a regular crumble. As a bonus, it’s easy to make.

You’ve probably realised by now that I’m a little obsessed with getting in my veg each day. I think it helps keep my diet balanced and my body happy. GRILLED CAULIFLOWER STEAK WITH A TAHINI AND YOGHURT DRESSING
This simple little recipe is delicious for lunch or dinner and can be made with very little kitchen equipment. In fact just a pan or a sandwich press is all you will need, and basic things like a knife, plate and spoon but if you don’t have those I’m guessing you’re not big on cooking and probably aren’t even reading this. Good chat.
STRAWBERRY AND VANILLA GRANITA
This is a refreshing, easy and nutritious summer dessert. Or snack for that matter. It’s dairy, gluten and sugar free and maximises that fresh strawberry flavour. That flavour is enhanced by both the freshness of lime and the lingering vanilla flavour. You could leave the vanilla out but I think it’s what takes this to the next level, from frozen snack to dessert.
BRILLIANT BEAN BROWNIES
There are no black beans in these brownies. I repeat, these brownies are black bean free. I sometimes feel that black beans have a slightly overpowering taste, even when smothered in chocolate. When I make a bean based brownie I like to use cannelini beans as you still get the health benefits of them being a plant based dessert that’s full of fibre, but with a less ‘beany’ taste.
NASTURTIUM, MINT, GRAPEFRUIT AND POACHED CHICKEN SALAD
This salad is fresh and zingy and full of contrasting textures – everything I like in a salad. And it’s basically fresh and zingy salad time now as the weekends have really been turning it on lately. Spring is here, like really here. Well for today anyway, if I get too excited about all this sun Melbourne will go and take it away again.
