This is a surprisingly easy breakfast or lunch as scrambled eggs take no time at all to prep. It’s also fresh and tasty and has protein, omega 3’s, vegetables and fruit in it – a super well rounded meal!

YUMMMMMM! Carrot cake, but healthy? Yes please! I am a big carrot cake fan (thus these carrot cake waffles) and also a big bliss balls fan. These guys came about as a treat to take on the plane with me and a way to use a carrot I had left in the fridge.

This red curry pumpkin soup is all kinds of yum and combines two of my favourite things to eat in winter: curry and soup! What could be better? Oh I know, getting a little naughty and topping it with crispy shallots and coconut cream.
CHOC-PEANUT BUTTER SKILLET COOKIE
If you hadn’t guessed yet chocolate and peanut butter is one of my favourite combinations. You can see this in this smoothie, this cheesecake slice and lots of other things I’ve forgotten to mention. I’m also all about skillet cookies for dessert at the moment, this is the third time I’ve made one in as many weeks. It’s becoming an issue.
BROCCOLI SOUP WITH GOATS CHEESE AND BASIL
I’ve been feeling a little under the weather lately so eating a bucket load of green vegetables and slurping soup just felt like the right thing to do. This is a super tasty broccoli soup full of herbs and finished with goats cheese for some extra yum. It’s also really easy to make which is just what you want on a glum winter night.
PERSIMMON SMOOTHIE BOWL
I found a bag of persimmons at my local market for $2 last week. They were in varying stages of ripeness and all nice and little. So I thought, screw you fructose I’m buying these. And I am so glad I did, because it turns out I can still totally tolerate a little persimmon, they were so sweet and delicious and made for the tastiest non-chocolate smoothie bowl I’ve had in a while.
MISO NOODLES WITH ROASTED CAULIFLOWER
CRISPY BAKED CHICKEN AKA FINGER-LICKIN-CHICKEN
Crispy, juicy, spicy finger-lickin’-chicken. This recipe is all kinds of good. The chicken is at once crispy and covered in a juicy glaze. It’s a little like eating fried chicken, but not fried, so also not like fried chicken. More like the best crispy baked chicken you will ever taste. Big call, but I’m backing myself on this one. I really like it, if you couldn’t tell.
