Some nights you just don’t feel finished with your meal unless you have dessert right? These chocolate laced options will have your sweet tooth feeling as satisfied as your body.
ROASTED CAULIFLOWER AND QUINOA SALAD WITH TAHINI LEMON DRESSING
Winter is all about comfort food, warming soups, home baked pies and a whole lot of cauliflower, pumpkin and sweet potato for me. And today the focus is on cauliflower. Crispy, golden roasted cauliflower. This is another great winter salad (or wrap!) to add to your rotation.
SWEET POTATO + CAULIFLOWER GRATIN
MEXICAN TOMATO SOUP WITH AVOCADO SALSA AND CRISPY TORTILLA STRIPS
I feel like this soup’s a bit naughty. Not in a bad for you way but because it’s using a summery ingredient in a winter recipe. But you know what? Sometimes a girl just wants what a girl wants and sometimes she finds a whole lot of roma tomatoes that might come from another state but at least they’re from this country so leave me alone. This soup is worth my ethical guilt.
VEGETARIAN BAHN MI BOWL
There’s a lot of bastardisation in this recipe. I mean bahn mi without the pate and the bread rolls is not a bahn mi! But this has all the other signature flavours and is super delicious!
SWEET POTATO AND SPINACH MASSAMAN CURRY
BLACK RICE, COCONUT AND AVOCADO SALAD
This salad is so tasty. Filling enough to eat on it’s own and it looks so pretty, look at those flecks of red, the creamy green avocado and golden toasted coconut. All the yum.
SPICED CARROT AND LENTIL SOUP
DAHL MAKHANI (NO CREAM!)
Dahl makhani is usually a tomato based curry that is heavy on the butter and cream. I love it but that amount of butter and cream can leave e feeling a little ick. It could also be all the onion. So I came up with this onion free, lighter version that’s still creamy in texture and full of fragrant flavour.
