Gem Lettuce, Dill Cashew Cheese, Parmesan
These lettuce cups willed with a quick homemade cashew cheese are the most delightful snack, starter or canape. You can leave the parmesan off and add nutritional yeast to make them vegan but as a vegetarian option with a snowy covering of parmesan at the end they’re incredible. Add to your Chistmas menu immediately.
Pumpkin Dahl with Tomato and Spinach
This autumnal dahl is both comforting and fresh thanks to the coconut and lime flavours through it. It’s mild in terms of heat level and fragrant with the toasted cumin stirred through at the end. It comes together with very little effort so is a perfect midweek meal and the leftovers can be freezed for lunches.
Extra Virgin Olive Oil, Spring Onion and Chickpea Quick Flatbread
This flatbread is vegan, gluten free and stupidly easy to make. It’s what I make when I have next to nothing in the cupboards and want a vehicle for toast toppings. without toast. The extra virgin olive oil and chickpea flour works so well together and the finely chopped spring onions add a burst of flavour. Easy, delicious any time of the day food is what I’m about.

This is a simple and delicious curry that can be made in less than half an hour. You can have it by itself, with a pile of greens or as part of a banquet type shared food situation.

Waffle Wednesday is back!!! Mostly because I felt like it was time for another waffle recipe! These are excellent for brunch or you can make them a little smaller and have them as a dessert. They’re gluten free and have a great texture too!

These little tarts are so delicious! They taste just like a banofee pie but with way less sugar, and a hint of coconut flavour for a bit of a new twist. Well new to me anyway…

It’s that time of the week again! Time to get life sorted for the week ahead… or just thinking about it while you laze around enjoying your Sunday. I’m planning on spending some time recipe testing so I can get new content up asap… but that is my version of relaxing some times. I need to start yoga.
