COCONUT AND CHOCOLATE POPS

 

I love Weiss bars. My favourite ones are the chocolate and coconut ones you can only by in boxes of four at the supermarket. The fact that these only come in fours is never a problem, they’re delicious I want four, it’s that I can never get them when I most want an icey pole, on the way home from beach for example when you stop at the servo or general store. First world problems right? Well this recipe solves none of those problems, it makes 4, isn’t stocked at my local service station and I can’t find it at the beach. However, it is a slightly ‘healthier’ version and I don’t need to leave the house on a 41 degree day to get one.

MISO CARAMELISED EGGPLANT IN LETTUCE CUPS

I never used to be an eggplant fan. It was too often, butter, soggy or watery. I’ve learnt that when it’s cooked in certain ways it is so delicious. This is one of those ways, in this little recipe the eggplant becomes meaty and laden with umami rich  flavours from the miso paste. The crisp lettuce cups are a perfect foil to this salty richness.

This is a delicious breakfast and perfect as we approach summer as it’s both cold and involves summer stone fruit – yum! You can make everything the night before so in the morning you just layer it all together (also known as throwing the topping in your oat jar/container) and you’re ready to run out the door.

BANANA CHOCOLATE MARBLED SMOOTHIE

 

This smoothie is both tasty and pretty. And full of the good stuff of course! You can use your preferred milk but almond or oat would both be delicious choices. The marbled effect is easy to do and makes for a pretty finish. We eat with our eyes first and I find the nice my food looks the more mindful I am when eating it.

I also love that vibrant green colour it goes – you just feel like your drinking health haha. And you are, this one has tons of vitamins and minerals, essential fats and fibre. SAVOURY PORRIDGE WITH POACHED EGG, CORIANDER AND CHILLI

Savoury porridge… What the?! Well this idea is nothing new… think congee. It’s just my take on it and if I do say so myself (and I’m the one who ate it so I’m in the best position to call it) it was really delicious. Despite my boyfriend telling me not to ‘mess with porridge’, I will be making this very often, because sometime when you mess with stuff magic happens. It’s also full of nutrients: fibre and protein from the oats, protein and healthy fats from the egg, calcium from the tahini, and the vitamins and minerals provided by the coriander  and chilli (and whatever other veges you top with). The tahini also lends a delicious rich creaminess to the porridge. Yum.

LEMON DELICIOUS PORRIDGE

Processed with VSCOcam with a6 preset It’s getting cold in Melbourne and the crisp mornings have me craving porridge, and I’m trying to mix up my combinations as much as possible. This is a dreamy dessert like porridge. It’s reminiscent of a lemon delicious pudding or a lemon tart with the combination of creamy vanilla scented oats, tart lemon curd (without cream or butter) and toasted almond crumb. But it makes a much more nutritious breakfast than either of those options, thanks to the oats and added nuts!
