Full disclosure: these are not a health food. They have some things in them that make them a tiny bit more wholesome and nutrient rich than a regular cookie. But they are a sugary treat. I’m all for the belief that if you want a cookie, dessert of any kind, or whatever so called bad food you’re craving, then have it. Just make it yourself.
Crispy Chocolate Gingerbread Cookies (Gluten Free)
It’s December so you know what that means: Christmas baking! I like to mix it up with old favourites and healthier takes on old favourites. These crispy gingerbread cookies have a hint of chocolate, lots of spice and are low in both fat and sugar in comparison to a regular cookie. They’re also gluten free if you’re into that sort of thing;)
OLIVE OIL AND SEA SALT DOUBLE CHOCOLATE BROOKIES (VEGAN!)
This double chocolate vegan treat is a cross between a cookie and a brownie, the crisp exterior of a cookie with the soft chocolate interior of a brownie.
CHOC MINT COOKIES
These are freakin’ delicious. Like, ridiculous. I almost made myself sick because I couldn’t stop eating them. Could have also been because I licked some of the drizzled chocolate off the board…hmmm. Plus they are gluten free, dairy free and lower in sugar than the cookie they’re impersonating.
WHITE CHOCOLATE AND MACADAMIA ANZAC BISCUITS
I know that an ANZAC biscuit holds a very special place in Australia and New Zealand’s hearts and I shouldn’t muck with it too much. And I haven’t! This is just an alternative, and macadamia nuts are super Australian. And white chocolate is super New Zealand. Follow my logic carefully on that last part… the Maori name for New Zealand is Aotearoa, meaning the land of the long white cloud, and white chocolate is white like a cloud! Makes total sense. Much Australia. Much New Zealand.
FRIDAY FINDS
There’s a lot of things other than food that I think about. Well not a lot of things but some, really. And some of them are even interesting and worth sharing. With that in mind I’ve decided to start a ‘Friday Finds’ series of posts where I can blab about other things that I’m excited about/ obsessing over. To be honest this is still going to include food. Just not my own recipes, so totally different right?
BANANA WHOOPIE PIES
Whoopie pies. They sound ridiculous. And they’re so good. It’s basically two light sponge halves with a crispy exterior sandwiched together with creamy goodness. Delicious right? These little guys taste like banana cake and have less added sugar and oil than your typical treat so although they are a treat they’re a slightly lighter one. But they don’t taste like it and that’s the trick.
PEANUT BUTTER AND CHOCOLATE OAT COOKIES
Cookies. Is there a better word to hear when you’re feeling a little snacky? I have quite a few cookie recipes that I rotate but these guys have fast become a new favourite. They just have such a good texture and so much flavour. Soft chewy oats, the crunch of peanuts and melted chocolate… I can’t possibly need to say anything else to convince you to give these a shot!
