This soup is so velvety smooth and comforting. You will not be able to get enough. Plus it’s full of fibre, thus will keep you full even if you’re not dunking bread in it. The beans don’t need to be soaked before you start, which gives them a deeper flavour that goes so well with the cauliflower and sweet leek. Then there’s the garnish, you can make it with or without bacon and either way it’s crispy goodness is a textural treat. There’s also the other extra garnish of parmesan and lemon zest that ties everything together and makes this creamy, comforting winter soup taste fresh. It’s a winning combo.
HEALTHY LUNCHES, ZERO PREP
These lunches are aimed at people who have a work kitchenette and actually get a lunch break – but have limited time for lunch prep outside of work. Or, like me, maybe some days you’re just not that organised and need something you can throw together at the start of lunch that’s more nutritious than two minute noodles (and isn’t a tuna salad).
GRILLED CAULIFLOWER STEAK WITH A TAHINI AND YOGHURT DRESSING
This simple little recipe is delicious for lunch or dinner and can be made with very little kitchen equipment. In fact just a pan or a sandwich press is all you will need, and basic things like a knife, plate and spoon but if you don’t have those I’m guessing you’re not big on cooking and probably aren’t even reading this. CRISPY CAULIFLOWER TACOS
It’s true. I have posted A LOT of cauliflower recipes of late. But I keep on finding whole cauliflower at the market for $2 or less and I just can’t resist a good deal! These tacos are a fabulous vegetarian alternative to my usual fish or chicken tacos. The cauliflower florets get all delicious and crunchy on the outside while staying a little crisp on the inside – I’m not a fan of overcooked cauliflower!
CREAMY CAULIFLOWER RISOTTO
If you put risotto in the too hard basket then this one will show you that risotto isn’t as difficult as you think it is. This risotto is amazing, it’s velvety and creamy, without the cream and full of crispy crunchy texture to boot. This recipe makes for a simple and impressive dinner, I promise it’s not just ‘wet rice’.
RAINBOW SALAD BOWLS
At the moment I’m all about lunch. I have a couple of go to favourite lunches. No. 1 is last night’s dinner (I am a lazy girl at heart!) and No. 2 is a rainbow salad bowl (which often involves last nights dinner ha). They’re such a great way to get loads of high nutrient unprocessed foods into your diet and are ridiculously tasty. Also, you never get bored of them because they can be varied endlessly. This post gives you a set of guidelines of what to include to be sure of a delicious and nutrient packed lunch, but remember they are guidelines, not rules, so take the reigns and make your salad bowl your own. The key is to get the balance right.
CAULIFLOWER SAUCE
Sometime beige on beige tastes anything but. The main ingredient in this sauce is cauliflower and it can be used on pasta instead of bechamel sauce, it also works well as a substitute for mashed potatoes! I’m a little addicted…
