This cake is cooked entirely in a skillet because apparently that’s how I like to dessert. The main reason is because I didn’t want to make a cake to serve a party, I wanted it to be small… like 4 serves. And the easiest way to do that (if you don’t have a tiny cake tin) is to make it in a skillet. So here we are, another skillet dessert. You’re welcome.
MOCHA CAKE WITH COFFEE CREAM ICING
This is a super impressive looking birthday cake that is way easier to make than it looks!! It’s refined sugar free and gluten free and has a rich sort of mousse cake like texture without being cloyingly sweet. A birthday cake amazing enough for my best friend, and a little bit good for you too! Happy Birthday Anz x.
GLUTEN FREE LAMINGTONS WITH RASPBERRY CHIA JAM AND CACAO ICING
These aren’t your usual lamingtons. The title probably gives that away! They’re gluten free, refined sugar free, made from wholesome ingredients and include a yummy layer of raspberry chia jam in the middle. I’m particularly proud of the chocolate glaze that I think I’ll be using on many baked things to come! Although they are a healthier version they’re also super delicious – for real!
CARROT CAKE WAFFLES WITH CINNAMON MAPLE YOGHURT
These waffles scream Easter brunch, which was my vibe when the idea popped into my head. You know how you get some ideas and you’re like ‘Yes – that will be amazing!’. Then you give it a shot and it’s an unmitigated disaster? These were the exact opposite to that. They turned out exactly as I wanted them to. Like the contents of my imagination had magically fallen onto a plate and then into my mouth. Well I helped it into my mouth but the rest, the rest was magic.
BANANA WHOOPIE PIES
Whoopie pies. They sound ridiculous. And they’re so good. It’s basically two light sponge halves with a crispy exterior sandwiched together with creamy goodness. Delicious right? These little guys taste like banana cake and have less added sugar and oil than your typical treat so although they are a treat they’re a slightly lighter one. But they don’t taste like it and that’s the trick.
BLOOD ORANGE AND POLENTA CAKE
This cake is gluten free and uses a mixture of polenta and nutrient filled nuts to add texture and flavour. Blood oranges are one of my favourites, i love the variation you get in colour and they have such a beautiful flavour with a slight bitterness which balances this cake nicely. This is a cake, so it’s not health food but we all need cake sometimes and this one is full of real ingredients and amazing flavour.
RAW STRAWBERRY CHEESECAKE SLICE
Another dairy free, vegan, gluten free cheesecake miracle! This one is a little simpler, fresher and more pink than my other cheesecake slice. An oat and almond base is topped with strawberry cashew ‘cheesecake’ filled with chunks of fresh strawberry and a swirl of strawberry puree. It’s delicious and very pretty.
CHOCOLATE AND BERRY MUFFINS
I have a problem. I really like baked goods. Especially in the afternoon, anything sweet really, although fruit just hasn’t been cutting it lately. I need more. But when I eat too much processed food and sugar I sleep really badly; then I’m tired; and then I want more sugar in the afternoon to stay awake. It’s a sugary, circular battlefield. To solve this ‘problem’ (really I’m using that term in a pretty fast and loose way – my problem is on the pathetic side!) I’m trying to find low fructose, whole food solutions that are free of refined sugar to stop this cruel circle. Saving lives over here, solving world problems and the like haha.
BANANA BREAD
This is so delicious. I made this a month or so ago but sometimes I dream about it. It fills the house with such a delicious smell. And slathered in peanut or almond butter – or just plain butter – it is ridiculous. This also passed the boyfriend test and he is both a lover of sweet things and banana bread so I feel that speaks volumes.
YOGHURT AND BERRY BUNDT CAKE
This cake tastes as delicious as it looks. it’s not overly sweet and the berries on top of the cake go a little bit jam like and tacky. You don’t have to bake it in a bundt tin (see note at bottom) I just like that this tin gives you more crunchy cake crumb around each piece.
