This version of bread and butter pudding is a little shocking. It’s doesn’t actually contain any butter! I know, I’m crazy. Always living on the edge and playing fast and loose with… the names of things? That said, it’s delicious and filled with goodness and the perfect light dessert or brunch. It’s brunch/breakfast appropriate as it’s just bread, fruit, milk, eggs and some chia.
Potato Waffles with Pea Puree and Horseradish Yoghurt
Everything about these is a yay. I’m a little waffle obsessed and sometimes even just use my waffle maker as a sandwich press, but it’s always a happy day when I whip up a batch of waffles and I’m really vibing the savoury variety at the moment. These are filled with potato and parmesan and you’re going to love them.
VEGAN FRENCH TOAST
Dessert for breakfast? Or breakfast for dessert? Whatever your preference this vegan French toast will keep you happy. I’m not vegan and I’m still a big fan because it’s a little bit lighter than the traditional variety, the bread gets crisp and it’s lightly flavoured with the natural sweetness of the vanilla and cinnamon it’s soaked in.

VEGETARIAN HUEVOS ROTOS
It’s Mother’s Day on Sunday and for many of you that might mean brunch. My own mum has vetoed the idea and opted for dinner but I might see if my sister wants brunch because I feel like it’s just a good option for any Sunday. Who’s with me? This dish translates to broken eggs and it can be eaten any time of the day you like, the first time I ate it was for dinner;) However if your mum is all about the savoury breakfast his will be a winner and it’s a breeze to make!
ZUCCHINI WAFFLE BREAKFAST NACHOS
This is a killer breakfast that combines so many of my favourite things. Waffles? Tick. Nacho style layering? Tick. Zucchini fritters? Tick. Plus they’re topped with a herby yoghurt sauce, fried eggs and avocado. It doesn’t get much yummier. These waffle breakfast nachos are a fun way to serve breakfast to a group of people, we don’t eat share food at breakfast often enough, I say.

Going out for brunch is great, but making it at home is better (sometimes). Primarily because you don’t have to get dressed. And if you’re feeling super indulgent you can just go right back to bed after. What could be better? Okay, someone else in your house hold making these. Email them the list. I love going out for brunch and one of my favourite things on any brunch menu is fritters. Especially corn ones! But so often they are deep fried and more batter than corn. These fritters are quick and easy, full of corn and gluten free. They also make a really easy to prep lunch idea.
