My tahini obsession has reached new heights recently and this chicken is the best thing to come out of it. I’ve never used tahini to give sesame flavour to Asian dishes before and I have no idea why because it’s amazing. The marinade coating this chicken is insanely tasty and the chicken gets golden and crispy so it’s a very good time.
Cauliflower and Chickpea Baked Eggs
These eggs are so creamy and indulgent tasting but they’re actually full of vegetables, fibre and protein. Baked eggs without the tomato factor make for such a nice change. They’re also a great way of using up any leftover cauliflower you have around.
GARAM MASALA CHICKEN, GREENS AND RICE TRAYBAKE
One pan meals are always a good idea, and this garam masala spiced one is so easy! it’s a quick marinade then throw things in the pan. Even the rice is cooked in there. GLUTEN FREE EGGPLANT CHIPS WITH MAPLE BALSAMIC SAUCE
I think all 3 recipes I’m posting this week have little travel stories attached to them. I got the idea for these chips from a trip to Granada, Spain. I went for a weekend and ate my weight in Tapas, so obviously I loved every moment of it.
BAKED SWEET POTATOES WITH CHEDDAR, BLACK BEANS AND GREEN SALSA
Baked sweet potatoes make for such a good lunch or dinner! You can make these ahead of time and just reheat things when you’re ready to eat. They take a little bit of time in the oven but you’re just waiting for most of that time – there’s not lots you need to do to make them delicious. You can read a book, dance round the kitchen, have a glass of wine etc while you wait for the oven to do it’s thing.
BAKED CHICKEN KIEV WITH HOME MADE WEDGES
Hey there 80’s classic I’m coming at you with both my wardrobe and my food right now. In terms of wardrobe there’s this pair of vintage jeans I own which are a stone grey with an elasticised waste, they’re sort of baggy and sit up high and I roll them up and sometimes wear them with platforms, a black silky cami and probably not a bra. They’re fantastic. Pretty much all men hate them, but I love them and that’s the part that matters. I also love Chicken Kiev and I’m bringing it back. Even if it’s only at my own table.
SPICED CRISPY KALE CHIPS
Kale chips, yes yes I’m a bit late jumping on this bandwagon but I swear I’ve been making them for years now. It’s just that I didn’t think my kale chips with just olive oil, sometimes chilli, and salt were ground breaking enough to share with anyone. Not that every recipe I share is always groundbreaking! Clearly not! But these kale chips are next level. I ate 2/3 of a bunch of kale in one sitting because of these. That’s a lot of kale, who does that?

We’re getting a little trashy today! Buffalo chicken for the win. I love love love spicy things and buffalo chicken wings are the bomb. But they’re also not great for you… So I’ve tried to lighten things up a little here with a baked, not fried version of them. And they’re not wings, because I figured they weren’t going to be easy to eat in a salad bowl and this is essentially a ridiculous chicken salad.
