Your work lunch shouldn’t just be about a green salad and a can of tuna. Or a ham sandwich. Or two minute noodles. I mean, all these options have their benefits (maybe not the last one!) but they’re a bit boring and you deserve better. So much better.
Yeah, you read that right. That word is definitely not Italian is it? But sugo is. Gochujang is a a spicy fermented bean paste from Korea. And it’s pungent sweet and spicy notes give a totally new and really interesting twist to traditional spaghetti and meatballs. I know it sounds like weird fusion cooking but it’s full of flavour and defines ‘winter warmer’.
 This green goddess noodle bowl makes for such a delicious lunch. It can be eaten warm or cold, is full of green veg, buckwheat noodles and a tasty immune boosting ginger laced dressing. Plus it can be vegetarian, vegan or filled with whatever choice of protein you’re into. Versatile, easy food that works just as well for lunch as it does for dinner is what I’m all about.

I live in a household of two. Two people can’t eat a whole roast chicken in one sitting. I mean, we have friends over frequently but sometimes I want a roast and when there is only two of you you’re going to have leftovers. And leftovers are what these noodles are all about.
