Week 19? What?! how did that happen? This week has been crazy busy so I’ll be keeping this post short and sharp but full of delicious ideas for the week ahead.
It’s that meal planning time of the week again! I’m not big on the whole spending my Sunday’s prepping food thing but I do like to take 15 minutes to sort out what I’m eating for the week ahead. I sometimes don’t actually get past the planning stage, actually the shopping part usually happens on Monday after work. That said, if I spend a few minutes planning, writing a shopping list and making some delicious choices on Sunday then it makes my Monday go far easier.
Yay to new meal plans! I have such a delicious bunch of recipes planned for this week. The Tortilla soup above might be one of my favourites. It’s so good. Like really ridic. Probs because of the cheese? Most things are because of the cheese… Like, why am I so full before dinner? The cheese, definitely the cheese.
Often people don’t thinking of cooking chicken whole on the barbecue when they think of barbecue. And I don’t mean rotisserie style I mean right on the grill. It’s by far one of my favourite things to barbecue as it gives it so much flavour and such crispy skin. Cooking on the bone also helps prevent some of the dryness that you can get with grilled chicken.
     This is date night pasta. Whether that date is with yourself, a mate or your significant other. The kind of dish that’s impressive but very little effort so you’ll look like a whizz without getting yourself in a state. If tomatoes are in season it is beautiful with roasted Roma tomatoes stirred through, if not then just use a good quality passata. Or alternatively cherry tomatoes, halved and thrown in a pan with a little smashed garlic, chilli, oil and parsley and cooked until blistered is also great (I also make them a bit saucier (in all meanings of the word) by adding a little reserved cooking water from the pasta to loosen the tomatoes into a sauce when I do this.
Hello Sunday!!! It’s time to relax, potter, adventure and maybe do a little planning for the week ahead. This week I’ve got two delicious meal plans for you as per usual. One vegetarian, one for the omnivores. There’s a variety of flavour, from the spicy to the mild and from the trashy (buffalo chicken say what?!) to the slightly unusual (can I call it a meatball when there’s no meat in it???). I hope you love the plans!
And it’s February! How’s the year going so far? Such an annoying question, because we all love to be reminded of how fast time passes don’t we? This week, for the majority of them, I’ve tried to make the recipes quick and easy to throw together after work. The whole making things easier for people when it comes to cooking healthier food is totally my vibe this year.
Yes, yes poke is raw fish and this is a vegan recipe. As per usual I’m and playing it fast and loose with the food rules and calling things what I feel like. The steamed and marinated beetroot stands in for the raw fish in this ‘poke’ rendition and it’s full of fresh, light flavours.
