Fried rice is one of my favourite things. Not wasting leftovers is another of my favourite things. Christmas is a time when we tend to over cater in my household, and coming up with new ways of using the leftovers is a fun post Christmas game. This fried rice is super tasty, full of veg and can use up a tonne of left over bits and pieces in your fridge.
CHRISTMAS THINGS AND FIRST EBOOK RELEASE!
I haven’t been as regular on the blog posts this last week or two… but with good reason. Make that good reasons. One of which is that, well Christmas is just a busy time isn’t it? I’ve got family visiting, weddings on, music festivals and job quitting going on.
CHICKEN, GINGER, CHILLI AND ALL THE GREEN THINGS RICE NOODLES
These noodles are full of flavour and nutrient packed ingredients! You can use any green vegetables you want, go with what’s in season. They’re also quick and easy to make as you can be as fancy or as basic as you like with your ingredient prep and using lean chicken mince means you don’t need to cut any chicken – another time saver.
VEGETARIAN DUMPLINGS WITH CRACK SAUCE
PRAWN TOSTADAS
Well hey there summer! Time for long nights sharing food with friends in the evening sun – and these are just perfect for that. The fresh prawns, creamy avocado and sweet corn are amped up with a little chilli and lime to make for a super tasty snack or starter. As a bonus they’re super easy to make too.
COCONUT CUSTARD
This lightly coconut flavoured custard is dairy free and has a silky texture. It’s the perfect thing to have with crumbles, in a trifle or with your christmas pudding. It also has the plus of being far lower in sugar than regular custard.
SUMMER STONE FRUIT CRUMBLE
This crumble is the perfect way to use up stone fruit that might be getting a little over ripe or that you have an excess of. It’s also just a delicious was to eat it. It’s completely dairy free and lower in fat and sugar than a regular crumble. As a bonus, it’s easy to make.
STEAMED OCEAN TROUT WITH SESAME, GINGER AND GREENS
The perfect thing when you want something, light, quick and nourishing. Green vegetables and omega 3 rich ocean trout make for a well balanced meal, especially when you serve it with some brown rice to soak up the delicious sesame and ginger dressing. You can have a healthy and oh so tasty dinner ready in about 20 minutes, and that’s a win in my books.
