TROPICANA CHIA PUDDING

Coconut, lime and passionfruit. Sounds like an excellent cocktail right? Also makes for a delightful chia pudding. This one is a nice change from whatever your usual mix is and it makes you instantly go.. ahh summer!

CHOC PEANUT BUTTER SMOOTHIE

This is the kind of smoothie that’s leaning into milkshake territory… but without all the added sugar. It’s like a Reeses peanut butter cup, only filled with things that are good for you and totally appropriate for breakfast! Plus it’s full of protein to make you strong (and full!).

CRISPY RICE BOWL WITH ALL THE GREEN THINGS

I love a rice bowl. And this one is a dream. Crispy brown rice, flavoured with lime, green chilli and coriander and topped with all the green things and an egg. You can play around with what green stuff you add depending on the season or just what’s in your fridge. You’ll probably find you’re putting all sorts of stuff on top of this rice because it’s basically the bomb.

Friday Finds

Door. Silverlake, LA
Door. Silverlake, LA

I’m back from holiday and all full of goal setting, fresh starts and new food inspiration. My first day back was actually a little terrifying as I have a heap of change going on at the moment (no job, end of a relationship and the subsequent search for a new home that comes with that) and I felt like reality had just hurled itself at me. Which was annoying as the holiday was fantastic, and I was totally happy keeping reality at bay for a while! But it’s time to open some new doors.

This weeks Friday finds is a little bit about that reality and also about some new obsessions that my recent travels have launched at me.

MINT, BEETROOT AND GREEN BEAN SALAD

I’m really into beets and goats cheese at the moment (such as in this tart!), and the mint and beans in this salad mean it’s also fresh and crunchy, making it another delicious summer salad to add to your rotation.

BARBECUED CALAMARI WITH GRILLED CORN SALSA

Calamari loves to quickly cooked, and it doesn’t need to be deep fried to still be delicious. This recipe ticks lots of boxes for me, it’s quick, easy and all the cutting for the salsa is balance by the lack of it for the calamari.

COCONUT AND CHOCOLATE POPS

I love Weiss bars. My favourite ones are the chocolate and coconut ones you can only by in boxes of four at the supermarket. The fact that these only come in fours is never a problem, they’re delicious I want four, it’s that I can never get them when I most want an icey pole, on the way home from beach for example when you stop at the servo or general store. First world problems right? Well this recipe solves none of those problems, it makes 4, isn’t stocked at my local service station and I can’t find it at the beach. However, it is a slightly ‘healthier’ version and I don’t need to leave the house on a 41 degree day to get one.

Friday Finds

This weeks Friday Finds is a lot about books. And still about food. Holidays always mean catching up on missed reading for me, even if it’s an adventure kind of holiday there’s usually some sort of down time involved, even if it’s only mid flight. It’s also about other vacation related things. Like my hair.

YOGHURT AND BERRY MUFFINS

I love using oats in baking, their higher protein content makes them so filling, in a long lasting way that almost allows me to stop at just one of whatever I’ve made. Almost. These muffins are made with lovely wholesome ingredients and have just enough sweetness to feel like a treat.
