ROAST KIPFLER AND CAULIFLOWER SALAD WITH ROMESCO DRESSING

Romesco Potato and cauliflower salad 2

A new spin on a warm potato salad but with way more vegetables and a dressing that’ll make you forget all about mayo. Basically, it’s the perfect winter salad. It’s full of winter vegetables and can be served warm or cold. The dressing is super tasty and the only part of this salad that takes a teensy bit of effort to make.

CHOC-PEANUT BUTTER SKILLET COOKIE

CHOC PEANUT BUTTER SKILLET COOKIE 5    If you hadn’t guessed yet chocolate and peanut butter is one of my favourite combinations. You can see this in this smoothie, this cheesecake slice and lots of other things I’ve forgotten to mention. I’m also all about skillet cookies for dessert at the moment, this is the third time I’ve made one in as many weeks. It’s becoming an issue.

LOTUS ROOT FRITTER WRAPS WITH PERSIMMON SALSA AND AVOCADO

Lotus Root Fritter Wraps 3

I’ve seen a few pics on Instagram lately of lotus root fritters. I’ve never tried them, but they looked so good and crispy and crunchy so I thought I’d give them a shot. So glad I did, a new favourite lunch was born in these wraps.

BROCCOLI SOUP WITH GOATS CHEESE AND BASIL

Broccoli SOup with goats cheese and basil 3I’ve been feeling a little under the weather lately so eating a bucket load of green vegetables and slurping soup just felt like the right thing to do. This is a super tasty broccoli soup full of herbs and finished with goats cheese for some extra yum. It’s also really easy to make which is just what you want on a glum winter night.

PERSIMMON SMOOTHIE BOWL

Persimmon Smoothie Bowl 3

I found a bag of persimmons at my local market for $2 last week. They were in varying stages of ripeness and all nice and little. So I thought, screw you fructose I’m buying these. And I am so glad I did, because it turns out I can still totally tolerate a little persimmon, they were so sweet and delicious and made for the tastiest non-chocolate smoothie bowl I’ve had in a while.

LOADED SWEET POTATO FRIES

How good are sweet potato fries? Do you know how you make them better? Load them with yumminess like they’re nachos and dig in, that’s how. I love this recipe, it’s super simple and super delicious – just how food should be.

MISO NOODLES WITH ROASTED CAULIFLOWER

VSCO Cam-5-2    Mmmmmm miso paste. You are a fermented joy of salty stickiness and depth of flavour. And you make these soba noodles delicious. The slippery noodles, still crunchy wilted greens and crispy bits of roasted cauliflower mean this noodle dish has a lot of yum going on.

CRISPY BAKED CHICKEN AKA FINGER-LICKIN-CHICKEN

Crispy, juicy, spicy finger-lickin’-chicken. This recipe is all kinds of good. The chicken is at once crispy and covered in a juicy glaze. It’s a little like eating fried chicken, but not fried, so also not like fried chicken. More like the best crispy baked chicken you will ever taste. Big call, but I’m backing myself on this one. I really like it, if you couldn’t tell.

STICKY, SLOW ROASTED SWEET POTATO

Sticky sweet potato 2

This is the best way to eat sweet potato. Hands down. It’s even better than the loaded fries recipe I’ll be posting next week. Maybe. Okay, not better, just different. Don’t make me choose between types of potatoes, that’s mean! I love them all with equal abandon. This particular rendition of sweet potato is unctuous (what a word amirite?!), sticky, glazed, sweet and salty goodness. Get ready to learn that patience is a virtue because it lands you glorious things like this.
