It’s that time of the week again! Time to get life sorted for the week ahead… or just thinking about it while you laze around enjoying your Sunday. I’m planning on spending some time recipe testing so I can get new content up asap… but that is my version of relaxing some times. I need to start yoga.
AUTUMN CHICKEN TAGINE WITH ALMONDS AND APRICOTS
First things first – you do not need a tagine to cook this, it works fine in a deep sided pan with a fitted lid so don’t go scrolling past this deliciousness because of your equipment woes. And it is so delicious, spicy sweet and salty flavours mix with delicious textures to make this the perfect autumn comfort food. And it’s easy.
CREAMY VEGAN MUSHROOM AND THYME SOUP
This mushroom soup is the perfect thing for autumn. It’s earthy and warming and super filling thanks to a secret ingredient that also gives it a creamy texture – without the cream.

First of all sorry for the silence this week! I have posted 1/4 of the recipes I usually would whoops. But my reason is good, I haven’t had time to test things and have just been exhausted! But I’m testing this weekend and should have some new and delicious things for you next week. I haven’t completely forgotten about you though… I’ve got a delicious meal plan for you!
COUSCOUS FRITTERS
I’m back from holidays and not loving reality. Such a positive start to a blog post right? I feel like I could have extended my holiday for twice the length at least if money hadn’t have been an issue. If money wan’t an issue so much of life would be different wouldn’t it? But I had the most amazing time, and have so many experiences to share with you all…soon. For now let’s start with a recipe that was influenced by Morocco, where couscous is king.

CHILLI, SESAME AND LIME POPCORN
I love snacking, especially when you’re watching a movie or sharing some drinks with friends. This popcorn takes a simple snack to the next level, making it very grown up and even more addictive than the original. Look out.
GREEN THAI CURRY CHICKEN STIR FRY WITH LYCHEE AND KAFFIR LIME
When I say chicken stir fry I mean chicken and vegetable. And probably mostly vegetable. Because I really do see stir fry as a chance to eat as many delicious vegetables as possible. Using curry paste as the base of a sauce for a stir fry is so fantastic as it gets rid of so much of the prep time and delivers big on flavour!
MUSHROOM, KALE AND LENTIL VEGETARIAN SAUSAGE ROLLS
Who doesn’t love a good sausage roll? We do these so well in Australia and I’ve been branching out occasionally recently and doing something I never thought I would. Eating vego sausage rolls. Sorry, ‘sausage’ rolls. I’m still calling them that as they’re the right shape and the same idea but just filled with veggies! Super nourishing and filling and all encased in flaky puff pastry.
