This noodle soup is totally a Japanese Thai hybrid thing, and it’s amazing. Like all my noodle, soup, and curry dreams coming true.
MEAL PLANS WEEK 20
Week 20? How did that happen?! I guess how it always happens with the whole world turning time passing thing… Well this week I’m staying on that quick and comforting food cos it’s getting a little chilly in Melbourne. I hope you like the ideas, and there’s other good news…
HOW TO MAKE CAFE WORTHY AVOCADO TOAST AT HOME, SO YOU CAN AFFORD YOUR RENT
I don’t usually post on a Saturday but today I’ve got something a little special for you: an exciting announcement and an easy recipe for how to make cafe worthy avocado toast at home. The recipe is mostly about how to plate this simple breakfast to make it look like it’s worth at least $18, because apparently that’s what we spend on brunch in Melbourne and why so many of us can’t afford to adult. Apparently.
PUMPKIN, CHICKPEA AND TAHINI SALAD
This salad is full of flavour and texture thanks to the creamy dressing, crunchy almonds, sweet pumpkin and fresh spinach. The perfect prep ahead work salad. Just don’t toss it all together until you’re ready to eat.
TURKEY MEATBALLS WITH CHERMOULA AND CAULIFLOWER PUREE
These meatballs are amazingly juicy and the perfect way to sneak some extra veg into your life. Made with lean turkey and grated zucchini they’re perfect for dinner or as a shared starter/appetiser.
COCONUT BANOFFEE TARTS
These little tarts are so delicious! They taste just like a banofee pie but with way less sugar, and a hint of coconut flavour for a bit of a new twist. Well new to me anyway…
MEAL PLANS WEEK 19
Week 19? What?! how did that happen? This week has been crazy busy so I’ll be keeping this post short and sharp but full of delicious ideas for the week ahead.
VEGETARIAN HUEVOS ROTOS
It’s Mother’s Day on Sunday and for many of you that might mean brunch. My own mum has vetoed the idea and opted for dinner but I might see if my sister wants brunch because I feel like it’s just a good option for any Sunday. Who’s with me? This dish translates to broken eggs and it can be eaten any time of the day you like, the first time I ate it was for dinner;) However if your mum is all about the savoury breakfast his will be a winner and it’s a breeze to make!
GLUTEN FREE EGGPLANT CHIPS WITH MAPLE BALSAMIC SAUCE
I think all 3 recipes I’m posting this week have little travel stories attached to them. I got the idea for these chips from a trip to Granada, Spain. I went for a weekend and ate my weight in Tapas, so obviously I loved every moment of it.
PRAWNS AND CHICKPEAS WITH PAPRIKA AND SAFFRON
So much of what I want to cook at the moment is about recreating flavours I experienced overseas. This is one of those dishes. It’s simple, comforting and full of flavour. And one of those flavour memories from traveling that I just keep coming back to.
